How to Make a Keto Easter Bunny Cake

If you are having a hard time making your Easter celebration fun and sugar free, you will love this keto friendly white cake recipe! I’ve used this recipe for many different holidays and celebrations. We’ve made this recipe a coconut flavor because of the unsweetened coconut we use on the outside of the cake but honestly, you can make it any flavor you want when you change up the extracts used in this keto cake recipe. This keto base cake recipe is very versatile and tastes absolutely fantastic.

This sugar free cake recipe makes two Keto Easter Bunny Cakes that are mini size! You can make one big cake using a regular 8 or 9 inch cake pan but you would need to double the recipe. The cake ingredients below make two bunny cakes but they are mini sized. We used a 3 inch cake pan and a 4 inch cake pan. Either size works perfectly!

This is a fun way to get the kids involved in the baking process too. You can help them bake the cake and cut out the pieces and they can decorate it any way they like!

Because we really wanted to keep this cake sugar free, we used sugar free chocolate chips and construction paper for the whiskers. Just be sure to remove the paper whiskers before consuming the cake. We also used paper ears and a paper nose on the second Easter Bunny Cake too!

Keto Easter Bunny Cake Recipe Ingredients

(Makes two cakes) 8 servings

Cake
3 eggs
1 tsp vanilla
1/2 cup coconut oil
1/4 cup coconut milk
1/2 tsp coconut extract (or 20 drops of OOOFlavors extract)
3/4 cup Lakanto sweetener, granulated
1/2 cup oat fiber
1/2 cup almond flour
1 tsp xanthan gum
1/2 tsp salt
1 tsp baking powder
2 scoops collagen peptides (about 2 tablespoons depending on the brand you use)

Frosting
1 cup heavy whipping cream
4 oz cream cheese
1/2 cup Lakanto sweetener, powdered
5 drops coconut extract
1/2 tsp vanilla extract
1/3 cup coconut flakes, unsweetened
Sugar Free Chocolate Chips for the eyes and ears.
Pink Construction paper for the whiskers.

Notes:
You can substitute the coconut milk for almond milk if needed. Or you an use any nut milk you choose. Just make sure it’s sugar free or unsweetened.
The collagen peptides in this recipe is really important. It’s adds a level of moisture to the cake that you won’t ever get while using nut flours. It binds really nicely too. I’ve tried many different collagen peptides and all the brands that I’ve tried work the same. I wouldn’t leave this ingredient out.

How to Assemble the Keto Easter Bunny Cakes

Flat Keto Easter Bunny Cake with Ears
(made with 2 separate 3 inch cakes)

1. Allow the cakes to fully cool before cutting out the patterns.
2. Grab a cup or a mason jar lid (as shown in the process photos) and trace a half circle out of the sides of one of the cakes. This will create the ears and the bow tie for the Easter Bunny Cake.
3. Place the cake on a decorative sheet and assembly it as shown in the photos.
4. Frost the cooled cake. You can choose to frost the whole cake or just the top part. It’s totally up to you. We only frosted the top part of the cake.
5. Add the sugar free chocolate chips for the eyes, ears and bow tie.
6. Cut out very thin strips of pink paper to use as the whiskers. You can also find sugar free red vines to use as whiskers too.
Note: Remove the paper whiskers before you consume the cake.

3D Keto Easter Bunny Cake
(made with one round circle cake only)

The 3d version of the Keto Easter Bunny Cake might be a bit easter to assemble if the kids are helping.

1. Allow the cake to fully cool before starting.
2. Slice the cake in half.
3. Frost one side of the cake.
4. Stand half of the cake upwards with the flat part on the bottom.
5. Stand the second half of the cake next to the frosted part of the first cake to get it to stand on it’s own as seen in the photos.
6. Frost the remaining parts of the cake fully.
7. Place the sugar free chocolate chip eyes on the front bottom part of the circle cake.
8. Drizzle the cake with sugar free coconut flakes.
9. Use a small butter knife and cut a 1/2 inch opening at the top of the cake for the bunny ears.
10. Use a sheet of pink construction paper to cut out the bunny ears as show in the photo below.
11. Fold the bunny ears as shown and place the folded part inside the slit of the cake. It holds nice and secure.
12. Remove the bunny ears before consuming the cake.
Note: If you choose to do this assembly instructions instead of the other one, this recipe will make 4 mini bunny cakes!

Cake Instructions

  • Preheat the oven to 350 degrees.
  • Grease 4 – 4 inch round cake pans. (you can use 3 inch cake pans too)
  • Melt the coconut oil in the microwave for about 20 seconds or until it’s fully melted.
  • In a small bowl, separate the egg yolks from the egg whites and mix the egg whites until soft peaks form.
  • Fold in the egg yolks into the egg white mixture.
  • Add the melted coconut oil, coconut milk, extract, sweetener and mix until it’s fully combined.
  • Add the remaining dry ingredients and mix until its smooth.
  • Divide the batter into four equal parts and put each part in a 3 to 4 inch small cake pan. Or place the full amount into one large 9 inch cake pan.
  • Bake 4 small cake pans for about 20 to 24 minutes or bake one large cake pan at 28 to 30 minutes or until the cake is fully done. You can tell they are done by placing a toothpick in the center of the cake. If it comes out clean, it’s done.
  • While the cake is baking, make the frosting.
  • In a medium bowl, add the heavy whipping cream with the vanilla and coconut extract. Mix the whipping cream until it forms soft peaks. Add the remaining ingredients and mix it until it’s smooth.
  • Place the frosting in the refrigerator until it’s time to frost the cake.
  • Allow the cake to fully cool before you frost it.
