Instant Pot Meatloaf (Cheeseburger)
I just made the best (and easiest) Instant Pot Meatloaf ever!!! Meatloaf is already low carb but we made this extra special with a sugar free ketchup on top and bacon cheese center filling! Gosh, it was good!
I use the Instant Pot 6 quart model DUO model Pressure Cooker. It has made my life so much easier on busy days when I need to get dinner on the table. I’ve put meals from freezer to instant pot before and they come out great! Frozen chicken wings are the easiest, I think. This size pressure cooker works well for my family of four. If my family where any larger I would definitely opt in for the larger model.

Instant Pot Meatloaf (Cheeseburger Edition) Recipe Ingredients
- 1 pound ground beef
- ¼ cup onion, diced
- ½ teaspoon garlic, minced
- ½ cup pork rinds, crushed
- 1 egg
- 1 tablespoon Italian seasoning
- ½ teaspoon black pepper
- 1 tablespoon mustard powder
- 1 teaspoon coconut aminos (or soy sauce)
- 3 slices bacon, diced and cooked
- 1 cup mozzarella cheese (or cheese of your choice)
- 2-3 tablespoons ketchup, sugar-free (we love Alterna Sweets Ketchup and Spicy Ketchup!)
Instant Pot Meatloaf (Cheeseburger Edition) Recipe Instructions
- Add beef, onion, garlic, pork rinds, egg, Italian seasoning, black pepper, mustard powder, and coconut aminos to a large bowl. Mix until combined.
- Spray a bread pan with nonstick cooking spray.
- Place ½ the hamburger mixture into the bottom of the pan.
- Next, sprinkle on top bacon and cheese in an even layer.
- Place remaining hamburger mixture on top, pressing down firmly to bring the layers together.
- Using a pastry brush (or spoon) brush the top of the meatloaf with sugar free ketchup.
- Grab a sheet of aluminum foil and lay it on a flat surface.
- Using a large spatula, scoop out the meatloaf mixture from your pan.
- Place on aluminum foil and fold up all the sides.
- Place 1 cup of water and the trivet into the bottom of your Instant Pot.
- Add your meatloaf in the foil boat or a silicone mold of your choice.
- Place Instant Pot on HIGH pressure for 20 MINUTES.
- Be sure valve is set to SEAL.
- Allow to cook and do a natural release for 5 minutes.
- Then turn SEAL to VENT and allow to release pressure.
- Top with chopped parsley for presentation and enjoy!

Do you have the cooking directions for the oven? I don’t have a pressure cooker, but would love to try this recipe.
