Keto Wookie Cookie Recipe Ingredients
Makes 12 mini wookies
- 1 large egg
- 1 tbs sour cream
- 1/2 tsp vanilla
- 2 tbs Oat Fiber (not oat flour)
- 1/2 tsp coconut flour
- 1/4 tsp baking powder
- 1/4 tsp xanthan gum
- pinch pink salt
- 1 packet splenda sweetener
- 5 drops liquid stevia
Keto Wookie Cookie Recipe Instructions:
Get the printable recipe card at the very bottom of this post.
- In a small bowl, combine the wet ingredients and whip until fully combined and fluffy.
- Add the dry ingredients to the wet ingredients and mix until fully combined and smooth.
- Allow the batter to set for about 5 minutes while you heat up the mini waffle maker. This allows the coconut flour to absorb the liquids properly.
- Use a small scoop (melon or cookie scoop) to place 3 small scoops on the mini waffle maker.
- Cook them for a minimum of 3 minutes or until golden brown.
- You can spread the cookies with sugar free jelly or sprinkle with powdered Swerve keto sweetener too!
Or you can frost them with this Keto cream cheese frosting recipe too!

I have not found a replacement for the oat fiber. Sorry.
