Keto Shredded Beef Recipe (oven method)

We used the oven method for this Keto Shredded Beef Recipe. It turned out oh, so tender and juicy and it’s loaded with flavor! There are a few tricks you need to know to make a perfectly moist shredded beef!

This recipe makes excellent Barbacoa tacos as you can see from this Barbacoa Tacos recipe. You can make this chuck roast ahead of time and use it in many different ways.

Keto Shredded Beef Recipe Instructions using the oven method

Preheat the oven to 350 degrees.
In a small bowl, combine all the dry seasonings and set aside.
Remove the chuck roast from the refrigerator and spread the seasoning mixture all over the roast.
Use a large frying pan over medium heat and add avocado oil to the pan. The oil will go from a thick consistency to a very thin watery type consistency when it’s fully heated.
Place the chuck roast in the hot pan and let it sear in the oil for about 4 to 5 minutes on each side. Don’t skip the searing process because this is what seals the meat and makes the amazing flavor in the recipe.
While the roast is searing, prep your large rectangle baking dish.
I always add a sheet of foil to the bottom for easy clean up but it’s not required.
Add the remaining ingredients (the beef stock, apple cider vinegar, and lemon or lime juice) to the bottom of the dish.
Once the roast has finished searing in the frying pan (it should have a beautiful color to it), place it in the baking dish in the liquid.
Cover the baking dish with a lid or use a sheet of aluminum foil to cover it.
Bake it at 350 degrees for a minimum or 3 hours. You might have to bake it for up to four hours. At the 3 hour mark, remove the chuck roast from the oven. Use a fork to shred the roast. If you can shred it easily, it’s done! Don’t over cook it or else it will become dry.

Sear the roast as instruction above.
Place the liquid ingredients into a crockpot.
Slow cook the roast in a crockpot for a minimum of 6 hours over low heat.

    I made a slightly less spiced version of this tonight (no cumin) and using low fodmap garlic powder from Smoke N Sanity instead of salt and garlic, because my husband’s IBS is well-controlled with low fodmap dietary restrictions. I also only had a 2 lb roast, but the portion size was perfect. No leftovers. I demolished mine on a bed of lettuce plus salsa and sour cream. He had his as ssam (just wrapped in lettuce, Korean-style) and expressed the hope that next time I made this there will be potatoes. That’s fine, he’s not doing low carb! This is a keeper, I’ll definitely make it again.
