Keto Funnel Cake Recipe (only 2 net carbs!)

We just made a fantastic and easy Keto Funnel Cake Recipe!  OMGosh, it’s good!!  These come out to only 2 net carbs per cake!

I’ve included some very detailed instructions just in case you’ve never made a funnel cake before.  It’s basically a friend flat cake that’s not too sweet but dusted with keto sweetener for the perfect taste!

You will want to eat the funnel cakes when you make them.  They are much better fresh although, I have made many and my kids swear they taste great cold too.  I’m a bit picky though.  I think it’s best when it’s still warm.

Funnel Cake Made in an Air Fryer?

Someone asked me if I’ve ever tried this funnel cake recipe in an air fryer and I have not.  I think it tastes perfect when cooked in oil.   If you don’t cook this in oil, you won’t get that light and slightly crunchy edge that you usually get with a normal funnel cake that you would by at Disney or at another theme park.  I’m so excited we can make a protein packed and sugar free funnel cake at home!  I’m so excited about this recipe!

What is Inulin Powder?

There’s one ingredient in here that you probably don’t know about yet.  It’s inulin powder!  The inulin powder I used come from chicory root.  Inulin is a type of fiber that is found in the roots of many foods, such as whole wheat, onions, garlic, and artichokes, and is commonly extracted from chicory root and added to foods. Inulin is fermented by bacteria that normalize the colon and is considered a prebiotic.  Prebiotic fibers are great for your gut health!  I bet you didn’t know that prebiotics also have the ability to strengthen the immune system, increase the absorption of magnesium and calcium, support healthy bones, and lower the risk of weight gain.  If you don’t have inulin powder, get you some!

Keto Funnel Cake Ingredients

Makes 2 cakes

 

Keto Funnel Cake Instructions

  1. In a small bowl add one egg and 1 teaspoon of water.
  2. Whip the egg with a fork.
  3. Add the coconut flour, inulin powder, protein isolate, cinnamon, and salt.
  4. Mix the ingredients until the batter is fully combined and smooth.
  5. Place the batter in a piping bag or a plastic baggie and set aside.
  6. In a small frying pan add about 1 inch of olive oil to the bottom of the pan.
  7. Heat the olive oil over medium heat until it’s hot.
  8. Once the oil is hot, you can start making the first funnel cake.
  9. Use a scissors and cut the tip of the pipping bag or baggie off.
  10. Press the batter through the pipping bag evenly into the pan in a circle motion to make one cake.
  11. Allow the funnel cake to cook until the edges start to brown and the cake batter looks almost cooked in the center.  Use the spatula and spread some of the hot oil over the top if it needs help cooking.  You want it to be almost cooked through before flipping it but don’t let it burn.  If the edges start to get too dark the heat may be up too high.  Reduce the heat if this happens.
  12. Flip the funnel cake and cook it until the cake is fully cook through.  It won’t take as long on the second side as it did on the first.
  13. Remove the cake from the hot oil with the spatula and place it on a plate.
  14. While it’s still hot, immediately sprinkle the funnel cake with Monkfruit confectioners blend keto friendly sweetener.  We love the Lakanto brand!
