Bacon Wrapped Meatloaf Muffins

Meatloaf is a classic comfort food. With this keto-approved version, the taste is amazing and is there anything better than bacon? I don’t think so.
Bacon Wrapped Meatloaf Muffins Recipe Ingredients
- 1 pound ground beef
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 1 teaspoon salt
- 2 teaspoon black pepper
- 1 cup cheddar
- 1/4 cup mozzarella
- 1/2 cup almond flour
- 2 eggs
- 1 tablespoon soy sauce
- 12 slices bacon, sliced in half
Bacon Wrapped Meatloaf Muffins Recipe Instructions
- Preheat oven to 375°F.
- Add all ingredients to a large bowl, minus the bacon. Mix well.
- Take the slices of bacon and create an “x” or “t”.
- Using a cookie scoop, place a scoop of the meatloaf mixture into each muffin tin.
- Tighten up the bacon slices by folding in the smaller side first (if you have one) and the larger side last.
- Flip the meatloaf muffin over so that you see the “smooth side” of the bacon. This will also hold the bacon in place during the cooking process in the oven.
- Bake for 35-45 minutes.
- Broil on low for 5 minutes or until bacon is crispy on the outside.
- Enjoy!

These were really good! Cleanup was not fun. I think I will try cooking them on parchment in a baking sheet next time.
I did it made clean up easy
They make parchment cupcake liners. I use them for everything when baking and using muffin pans. They are available on Amazon, then there is no cleanup mess.
How about using foil cupcake liners. Reynolds makes them.
I made these tonight. They were great. Very easy to make and cook. Boy the house sure smelled tasty!!!!!! LOL
5 Stars! My husband raved about this recipe and asked if we could tape it the back of one of the cabinet doors. LOL I followed the recipe exactly only I made 3 mini loaves and laid the bacon on top. Just take extra care of the cooking vessel, I put mine on a wire rack over a sheet pan it gets messy, but yes the house smelled fantastic.

I made these last night. I missed the part about broiling them on a rack and broiled them in the muffin pan so the bottoms were not crispy. They were still really good.
Made these tonight for dinner and my entire household was impressed and completely satisfied! Used ground turkey instead of beef, one family member has a beef allergy. Meatballs were moist and delicious. Paired well with sautéd greens beans.
I made a version of these yesterday and they are really good. I used sugar free bacon and made them in silicon muffin tin liners. Clean up was easy. I omitted the shredded cheese and the almond flour from the ground beef mixture, and just seasoned with dried parsley, and powdered parmesan cheese.
