Keto Grilled Cheese
I’m so excited! I just made the BEST Keto Grilled Cheese sandwich ever!! It was super easy to make and delicious to eat. I devoured it! Boy, have I been missing a good cheesy grilled cheese sandwich! It’s been 2 years since I’ve had one. I don’t know why I didn’t think of making a low carb sandwich earlier. I’ve been missing out!
The Keto grilled cheese was made with a super simple 60 second bread recipe. This recipe is so good that I have it memorized!
Keto Grilled Cheese Bread Recipe Ingredients
60 Second Bread ingredients:
- 1/4 cup almond flour
- 1 egg
- 1 tbs butter, melted
- 1/2 tsp baking powder
- pinch salt
Add one or two slices of your favorite cheese to make a Keto Grilled Cheese sandwich!
Keto Grilled Cheese Instructions made with 60 Second Bread
- Choose the microwave-safe shape you want for your sandwich. I used this square microwave-safe dish to make the perfect keto bread shape!
- In your microwave-safe dish, heat up 1 tbs of butter for about 10 to 15 seconds until it’s fully melted.
- Add the egg, almond flour, baking powder and a pinch of salt. Mix until all of the ingredients is fully incorporated.
- Now place that microwave-safe dish back in the microwave for 60 seconds, or until the bread has fully cooked. (it could take 90 seconds if your microwave has less watts)
- Remove the bread from the container. Be careful, it’s hot!
- Use a bread knife and slice the bread in half to form 2 slices of bread.
- In a small frying pan, heat 1 tsp of butter until it’s fully melted.
- Place 1 slice of Keto bread in the frying pan.
- Add 1 or 2 slices of your favorite cheese.
- Place the other slice of Keto bread on top of the cheese slices.
- Cook for about 30 seconds to a minute on each side until the sandwich is golden brown on both sides.
- Serve warm and enjoy!

I haven’t had any luck with this 60(90) second bread. It is way to egg tasting. Is there any way to cut the egg taste.
I add some dried oregano and chives to it plus some Parmesan cheese and salt and pepper. Before I cook it. I guess you could add any herb you want. That helps with the egg flavour.
You can just remove the yolks and add more whites to equal the same amount!
I haven’t tried this recipe but I have used white bread keto chaffle and it was too eggy so I read to use two egg white instead of 1 egg, I tried that and it was better.
I do the same thing using the regular chaffle. Cutting in half and putting toasted sides as inside with cheese slice between and then butter and grilling in small fry pan. My friend loved it this way.
I used this as a topper for chicken pot pie. Sauted some veggies and chicken, made a cream based sauce, poured into a 6×6 baking dish, then doubled the bread recipe and poured over the top and microwaved for 5 minutes!! I’m! Totally hit the craving is been having. Perfect!
So I rarely read reviews on recipes but this one was truly amazing! I was so skeptical about how it would turn out since its too simple and too good to be true, but did it anyway as I was craving grilled cheese. Turned out so good! Consistency is just like corn bread, I added some spices and it was perfect. So fast and easy! Why am I just now finding about this!!!
