Low Carb 30 Minute Chicken Skillet Dinner Recipe Ingredients
- 6-10 chicken tenders
- 2 tablespoons of olive oil
- salt and pepper to season
- 1/2 onion chopped
- 2 bay leaves
- 1/2 tablespoon of dried oregano
- 3 sprigs of thyme
- 3 cloves of garlic, minced
- 1 cup of grape tomatoes
- 1 tablespoon of Worcestershire sauce
- 28 ounces crushed tomatoes
- 2 cups of mozzarella cheese shredded
- Parmesan cheese shavings for garnish
Low Carb 30 Minute Chicken Skillet Dinner Recipe Instructions
- In a medium bowl, season chicken with salt and pepper.
- In a large pan over medium-high heat, warm oil and add in chicken. Cook chicken 3-4 minutes per side until the center is no longer pink and the juice is clear. Remove chicken, and set to the side.
- Add in the onion and seasonings. Cook for 2 minutes, or until onions have softened.
- Lower heat to medium-low.
- Add in the tomato sauce, garlic, tomatoes, and Worcestershire sauce.
- Mix together, add in chicken and cook sauce for five minutes.
- Once the chicken has warmed through (about 5 minutes), top with shredded mozzarella cheese and place under the broiler until the cheese has melted and has a slight golden color, about 2-3 minutes.
- Serve.

When I make this meal, it’s usually something I do often. We’re a busy family, so when I can cook something quick, I do.
However, side dishes are also a fun way to spice up this dish. Some of my favorite side dishes to go with this is Cilantro Lime Cauliflower Rice and Broccoli and Cheese Casserole.
I enjoy using cauliflower and broccoli to make my low carb dishes amazing! If you haven’t tried sides like this, go for it.

It may be hard to keep leftovers because this skillet dinner is so amazing. If you decide to make this and there are Chicken Skillet Dinner leftovers, you can store the leftovers. Keep in mind that cooked chicken is a tricky one.
You can’t leave it in the fridge forever. You need to eat within 3-4 days of putting in the fridge. The Chicken Skillet needs to be put in an airtight container. After 3-4 days, if it hasn’t been eaten, throw it away.
