Keto Tuna Pasta Salad Recipe Ingredients
- 1 – 8 ounce bag of Great Low Carb Bread Company Pasta Noodles, Elbow Pasta
- 1 teaspoon olive oil
- 2 – 5 ounce cans of tuna
- 3 eggs
- 1/2 cup Dukes Mayonnaise
- 1/2 cup sour cream (or greek yogurt if you prefer)
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 2 celery stalks (about 1/2 cup)
- 1 small cucumber (about 1/2 cup)
- 1/2 red onion (about 1/3 cup)
- 3 tablespoons dill pickle relish
Keto Tuna Pasta Salad Recipe Instructions
- Chop all the veggies (celery, onion, cucumber)
- Bring water to a boil and cook for about 10 minutes per package instructions.
- You can place the eggs in the pasta water to cook at the same time too but remove them after 6 minutes of cooking.
- Rinse with cold water and then drizzle with a little olive oil to prevent sticking, set aside.
- In a medium bowl add the mayonnaise, dijon mustard, sour cream, apple cider vinegar, dill pickle relish, salt, pepper, and garlic powder.
- Mix until fully combined.
- Add the chopped hard boiled eggs and mix until creamy.
- Open and drain the tuna.
- Add the cooked pasta, drained tuna, celery, cucumber, red onion, and mix until fully combined.
- Sprinkle with parsley just before serving.
