Low Carb Buffalo Chicken Casserole
This Low Carb Buffalo Chicken Casserole Recipe is the perfect recipe for dinner tonight! The buffalo flavors mixed with cauliflower and cheese are just amazing!

Low Carb Buffalo Chicken Casserole Ingredients
- 1 1/2 cups of hot sauce
- 4 cloves of garlic minced
- 1/2 teaspoon of black pepper
- 1 teaspoon of salt
- 1 stick of butter divided
- 4 cups of cooked shredded chicken breast
- 1 head of cauliflower chopped and steamed
- 6 hard boiled eggs chopped
- 6-8 slices of muenster cheese
- sour cream to garnish
- cilantro to garnish
Low Carb Buffalo Chicken Casserole Instructions
- Preheat oven to 375 degrees Fahrenheit.
- In a large pan over medium heat, melt 1/4 cup of butter. Add in garlic, hot sauce, salt and pepper. Cook for 2 minutes.
- Add in shredded chicken and stir to combine.
- To a well greased 9×13 baking pan, add in chicken mixture, and top with cauliflower and eggs.
- Slice the remaining butter and place it over the cauliflower. Top casserole with an even layer of muenster cheese.
- Bake 20-25 minutes, or until cheese is melted and bubbly and chicken has been heated through.
- Garnish with sour cream and cilantro, if desired.
