Keto Zucchini Chips Recipe

Low Carb Zucchini Parmesan Chips - Keto Friendly Recipe

I’ve tried this with Zucchini and Yellow Squash and both vegetables are amazing in this recipe.

Low Carb Zucchini Parmesan Chips Ingredients

  • 4 small zucchini
  • 1 to 1 1/2 cups of Parmesan Cheese (or your favorite cheese)
  • Optional: Low Sugar Spaghetti sauce for dipping

Low Carb Zucchini Parmesan Chips Instructions

  1.  Start by slicing each zucchini into slices that are about 1/4 inch thick.
  2.  Prep a large baking sheet with tin foil or parchment paper.
  3. Spread out the sliced zucchini rounds on to the large baking sheet and don’t worry too much if there is little space in between each one.  You can sprinkle easy one with salt and pepper.  This will depend on how much flavor your cheese has.
  4. Now sprinkle your cheese evenly over each Zucchini round covering each one.  I personally love the Parmesan-Romano blend and I always buy the big bag from Costco.
  5. Bake them on 425 degrees for about 15 to 20 minutes or until the cheese turns a golden brown color.   I talk to my Amazon Echo asking Alexa to set a timer and check it after about 10 minutes and keep adding 5-minute increments until it gets close to the color I want.
  6. You can serve them with a small amount of spaghetti sauce to add even more flavor too!  We do that often as well.
  7. Serve warm and Enjoy!

I can pretty much guarantee that the pickiest of picky eaters will enjoy this healthy snack!  It’s such a good way to enjoy veggies.

What to Serve with Keto Zucchini Chips

The great thing about being on the Keto diet is that you can totally eat full-fat dips. If you are wanting a nice and creamy dip, then you can totally do that! I like dipping Zucchini chips in ranch, the flavor is amazing! You can make your own homemade ranch.

You can also enjoy these Keto Zucchini Chips with a low carb sandwich. It’s so lovely to have something crunchy every once in a while.

How to Store Leftover Zucchini Chips

If you make Keto Zucchini Chips and don’t know where or how to store them you’re in luck. You can store these Keto chips in almost anything that seals. Do you have baggies? If so, you can totally store these in a Ziploc baggie! It’s such an easy way to tote them around too.

If you don’t want to store them in a baggie, you can store them in a container that is airtight. You can also store them right on the counter in your fridge.

How long this zucchini chip recipe will last as leftover

Just like any other chip out there, if they are left unsealed they will get stale and not taste very good. Once you make these zucchini chips, you can store them in the fridge for 2-3 days. They may start to get soggy again. If this is the case, then you will want to make them crispy again by putting them in the oven. Yes, the will crisp right back up this way.
