Keto Soft Serve Vanilla Ice Cream Recipe

This recipe is absolutely fantastic!  You will want to make sure you are extra careful with the dry ice.  It needs to be handle with gloves on so you don’t get frostbite.  You can consume dry ice as long as you ground it down to a very fine consistency just as we did in this Keto Vanilla Dry Ice Ice Cream recipe!  It’s absolutely fantastic and the kids will be amazed when you make it!  Be sure to check out the mixer bowl as it smokes from the dry ice!  It’s really cool to watch!

Keto Soft Serve Vanilla Ice Cream Recipe (made with dry ice)

Keto Soft Serve Vanilla Ice Cream Recipe Ingredients

  • 1 1/4 cups Almond Milk
  • 1 1/4 cups half and half cream
  • 1/4 cup heavy whipping cream
  • 1/3 cup Allulose sweetener
  • 1/2 cup Heavy Whipping Cream Powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 tsp vegetable glycerin
  • 1 1/4 cups dry ice (crushed until it’s powdered)

OPTIONAL:  Sugar Free Stoka Sprinkles

 

 


Keto Soft Serve Vanilla Ice Cream Recipe Instructions

  1. Add all the ingredients to a blender and pulse it until all the ingredients fully combine together.
  2. Start to prep the dry ice. Be very careful not to tough the dry ice with your bare hands because it could cause a burn to your skin. We placed the dry ice block in a towel using gloves on our hands. We used a meat tenderizer to break off a chunk of the dry ice. We placed that dry ice into a large ziplock baggie. We continued to use the meat tenderizer tool to crush the dry ice until it formed a powder (very fine) texture. You need 1 1/4 cups of crushed dry ice.
  3. Add the liquid ingredients into the bowl of your stand mixer and attach the paddle attachment.
  4. Turn the stand mixer on to level 2 power (slow) and slowly start to add the powdery dry ice mixture to the liquid mixture one tablespoon at a time.
  5. Once you’ve added all of the dry ice, turn off the mixer and use a rubber spatula to scrap down the sides of the bowl and mix up the bottom just in case any of the ice cream got stuck at the bottom of the mixing bowl.
  6. Continue mixing the ice cream on a speed of 2 or 3 until it’s thick and creamy!

This recipes makes 6 servings.

You can serve this keto soft serve ice cream immediately or you can store it in a freezer friendly airtight container for later use. The glycerin and allulose sweetener used in this recipe help to keep the ice cream soft and scoop-able.

Feel free to add a 1/4 tsp on vanilla powder if you like a bit more vanilla flavor in your keto ice cream.  I personally really like vanilla bean ice cream and I love tasting the little brown specks of vanilla in my ice cream.  The vanilla powder is fantastic in this recipe.

It’s important to note that you can easily double this recipe with no trouble at all if you are making ice cream for a large group!

 

This is the dry ice we used.  We broke off a small piece and put it in a ziplock freezer bag and used a meat mallet on the smooth side to crush the ice to a powdery form.

This is a photo showing the Keto Soft Serve Chocolate Ice cream consistency.  Don’t laugh but we were so excited to eat the vanilla ice cream that I totally forgot to grab a photo to show you just how thick and creamy it is.  The consistency is exactly like this!  You will love how thick and creamy it is!  It’s not like any other keto ice cream recipe out there.  It’s absolutely fantastic!

I wanted to show you two different types of vanilla.  You can use one or both!  I usually spend a bit of extra money and purchase the higher quality vanilla especially in recipes like this where the vanilla is the main ingredient that you will taste.  If you like a vanilla bean ice cream recipe you might add a 1/2 tsp of the vanilla powder!  It’s amazing and worth the money.

This is the part the kids like the most!  It really does smoke up like this when you slowly add the dry ice to the cream mixture in the stand mixer bowl.  It’s fascinating to watch!

Is dry ice safe to eat?

No, dry ice by itself is not safe to consume.  If dry ice touches your bare skin it can cause frostbite.  In fact, swallowing dry ice can be more harmful because it can freeze tissue in your mouth, esophagus, and stomach.

Dry ice is safe in an ice cream recipe like this if it is ground very finely into a powder form.

Yes, the recipe above is a dry ice ice cream recipe but it’s sugar free and keto friendly!  We use allulose as the substitute sweetener so it doesn’t cause a spike in your glucose.

Yes, but only when crushed down very finely or into a powdered form and mixed with the other ingredients in this recipe.  When dry ice warms up it turns into a gas and completely evaporates. Nothing gets incorporated into the food. The food is totally safe to consume.
