Today we made a Keto Lasagna Recipe with Crepini Egg wraps and it was fantastic!!!  We purchased these Crepini Egg Wraps at Costco but I’ve also seen them at my local Randall’s grocery store too.

Let me tell you about dinner this evening! Whoa! It was crazy good! I mean GOOD!

I wanted to make a super fast lasagna recipe but I don’t want to make fake noodles.  There are some noodles I’ve tried made out of mushrooms and I am not a fan.   When I saw these Crepini Wraps, I just knew there were a few recipes I wanted to make with them and a good Keto Lasagna was one of them.

We already make a Keto Strawberry Cheesecake Strudel recipe with them and that was delightful.  Seriously, add it to your menu!

The hardest part about this recipe is browning the ground beef (or ground turkey if you prefer). That’s the most time-consuming part. The rest is a piece of cake! Keto cake that is! haha!

Ingredients

Instructions

  • Brown the ground beef or turkey in a skillet. Season it with salt and pepper.
  • In a small bowl, combine 1 cup of Ricotta Cheese with 3 tbsp of parsley, 1/2 tsp of garlic powder , Italian seasoning and the eggs.  Then mix it until all the ingredients of are fully combined.
  • In a medium size casserole dish, you will start to layer the ingredients, but first, spray the bottom of the dish with a non-stick cooking oil.
  • Cut the Crepini wraps in thick lasagna noodles strips. The first layer in the bottom of the casserole dish will be your first Crepini wrap. This will create a crust at the bottom of the lasagna so you can easily serve it up when it's done. If you didn't have this crust at the bottom, you would probably have a soup type mixture that you would have to scoop out with a spoon.
  • Next, I put about a fourth of the Ricotta cheese mixture on top of the wraps.
  • Then I topped that with a thick layer of the cooked ground beef.
  • The next layer is about a 1/4 cup of Rao's marinara sauce.
  • Repeat the steps until you fill the pan and use the remaining ingredients.
  • You will leave the final step with shredded cheese on top.
  • Bake at 350 degrees for about 40 minutes or until the lasagna is fully cooked and the cheese is bubbly and golden brown on top.
