Keto Brownie Bites with Cream Cheese Swirls
We just made the softest Keto Brownie Bites with Cream Cheese Swirls and they are keto-friendly! I am in Heaven right now!
Thi recipe makes 18 Keto Brownie Bites! They can be made with or without the cream cheese swirl mixture on top. It’s totally up to you. You do need to know a bit about the swirl mixture though. We added water to this recipe for a very good reason. The cream cheese mixture tends to be very thick. It’s thicker than the brownie batter. By adding water and mixing it until it’s whipped will take away some of the weight to match the weight of the batter. If it’s too thick or too heavy, the cream cheese mixture will not stay at the top of the brownie mixture. It will sink to the bottom. If you want nice and pretty swirls on top of each brownie just be sure the weight is the same. Add more water if needed.
Other than the cream cheese swirl mixture having to be precise, the rest of the recipe is pretty fail-proof. They are super easy to make! You can easily double this recipe. I learned this real quick because the whole family enjoyed these so the next time I made them I doubled the recipe!
We used a Wilton silicone baking pan that has 24 squares just like this one on Amazon. It worked perfectly! This recipe makes soft brownies. You will need to let them cool a bit before removing them from the pan. I highly suggest using a silicone baking pan so they can easily pop out of the pan without breaking. If you decide to use a mini muffin pan instead, you might want to use mini muffin liners too. I haven’t tested a mini muffin pan but I’m sure it can be used.

- 1/4 cup butter, melted
- 3 tablespoons heavy whipping cream
- 2 eggs
- 1/3 cup Monkfruit sweetener
- 1/3 cup cocoa powder
- 1/3 cup almond flour
- 1/2 tsp pink salt
- 1/4 tsp baking powder
- Plus extra cream cheese, heavy whipping cream and keto sweetener for the cream cheese swirls.

Brownie Chaffle Instructions
You can make these as Brownie Chaffles too! We tested this recipe in a mini waffle maker and it was perfect!
Here’s how to make this recipe as a brownie chaffle recipe! Just create the recipe as described above. Add about 2 to 3 tbs of batter to a preheat mini waffle maker and bake it for about 2 to 3 minutes or until fully cooked through. This makes about 6 to 8 chaffles. Top with the cream cheese mixture as frosting. Don’t use the cream cheese mixture in the waffle maker. It won’t cook correctly. You would need to add a bit of egg to the cream cheese mixture to make the swirls and it’s really not worth it in a waffle maker because you won’t really see them anyway.
These turned about absolutely fantastic! They are super soft!! I finally have a keto brownie recipe that is not dry or bitter! SCORE!

- 1 oz cream cheese softened
- 1 tablespoon heavy whipping cream
- 1 tsp vanilla extract
- 1 tbs water
- 1 tbs monkfruit sweetener
Instructions
- Preheat the oven to 350 degrees.
- In a small microwaveable cup, heat the butter for about 15 seconds or until it's fully melted.
- In a small bowl, add the eggs and whip them until fluffy.
- Add the melted butter, heavy whipping cream, and monkfruit to the egg mixture and mix it until it's fully combined.
- Add the cocoa powder, almond flour, salt, and baking powder to the mixture and mix it again.
- Set aside and make the cream cheese swirl mixture.
- In a small bowl, heat the cream cheese in the microwave so it's nice and soft. Heat it for about 10 to 15 seconds.
- Add the monkfruit sweetener, heavy whipping cream, vanilla, and water. Mix until the ingredients are nice and smooth in texture.
- Set aside.
- Prepare the baking pan by spraying it with nonstick cooking spray. We used a Wilton silicone baking pan that has 24 squares just like this one on Amazon.
- We filled 18 squares with a little less than 1 tablespoon full of batter. Be sure to leave enough room to add the cream cheese swirl on the top of the batter.
- Now add the cream cheese mixture to the top of each brownie. You will add about a 1/2 teaspoon of the mixture to each brownie bit. Then use a toothpick to create the swirl on the top of each brownie.
- Bake at 350 degrees for about 15 to 18 minutes or until they are completely done. You can do a toothpick test by placing a toothpick in the center of the brownie. If it comes out clean, the brownies are done.

I made these and they are great! I managed to make 24 brownie bites AND 1 chaffle! I used the same Wilton silicone pan as you, but my batter was very fluffy. Anyway, they taste great!
These were good, healthy alternative. I used a 9×9 pan and cooked for 18 minutes. I will definitely be making these again.
