Seriously, guys. This Keto Bacon Wrapped Burrito Recipe is something you should write into your weekly dinner meal plan!! It’s that good! I used to LOVE getting burritos and wraps from food trucks around the city. One of my fav’s, was actually from a well-known food truck, where we used to live… and let me tell you- I’ve been craving a big fat burrito!!
Then, I saw this post on FB the other day, with this video of something wonderful! It was a tortilla burrito, wrapped in bacon! I was drooling, but nope nope and nope… That just wouldn’t do. Now I had to have some sort of a burrito. I couldn’t handle it any longer. I said to myself, “I guess I’m just going to have to keto-fy this thing and make it keto-riffic!!” I didn’t really say that out loud. Though, the dogs wouldn’t have made fun of me, I talk to them all of the time.
So, my mission began. I chose to accept it. (See what I did there?!! wink wink). I have tried coconut flour wraps and egg white wraps. Nah, that’s not going to cut it for this monster. I needed something more sturdy and delicious.
Fathead dough! Of course!! I’ve already adapted my own version of Fathead Dough pizza crust (my version added below) and knew the texture and flavor was good for pizza. That’s it!! This is going down! I wrote out my plan, now it was time to execute!
This escalated quickly- the madness ensued in the kitchen, but it was happening!! I shall have my burrito yet!!! Bwahaha! I thought about doing it like I have done before- making a Mexican taco style pizza pocket, with FH dough… but, BACON! This baked bacon wrap idea had me shook. I have to make it!
At first glance, it seemed like a lot of work, but I’M SO HAPPY I did it, it is totally worth it!! My husband was present to witness this, and he was really excited about it also. The prep work wasn’t that difficult and it all came together beautifully!
At the end of it all, I got my burrito fix! It is FANTASTIC! So worth the energy and your family will love this. Even the leftovers were amazing, with a side salad or some veggies. This is a LARGE main dish, so if you feel it may be too much, cut this recipe in half. Save the FH dough for a pizza crust later on or to make this again next week!
Keto Bacon Wrapped Burrito Recipe
Who needs an order to-go, when you can make this HUGE burrito at home, for the whole family!!
Makes: 8 servings
Keto Bacon Wrapped Burrito Recipe Ingredients
- 1 Fathead Dough Recipe (my recipe below)
- 2 pkg (~24 slices) Natural Applewood Smoked Uncured Bacon
- 1 lb Ground Beef, 80% – 84% Lean
- 1 medium Yellow Onion, diced
- 1 medium Green Bell Pepper, diced
- 4 oz. Mild Cheddar Cheese
Keto Bacon Wrapped Burrito Recipe Instructions
PREP-
- Prepare the fathead dough recipe, refrigerate until ready to use.
- Par-cook bacon- in the microwave or oven (not crispy).
(I lay mine over a bowl, on a plate and cook 3 minutes in the microwave)
- Preheat oven to 400 degrees.
- Cook ground beef in a pan until browned. Set aside.
- Saute onion and bell until soft, set aside.
- Use a 13×18” baking pan or 2 9×13” baking pans. Line with parchment.
- Roll out fathead dough to 1/4 inch thickness (full or half dough each).
- Bake 10 minutes, then let cool slightly.
ASSEMBLY-
- On parchment, lay out strips of bacon, slightly overlapping.
- Add the par-cooked fathead dough crust over top of the bacon strips.
- Layer all filling over the fathead dough crust.
- Carefully roll crust with filling over until closed together.
- Then wrap bacon around (crossing over to seal).
- Transfer wrapped burrito over to baking sheets with wire racks on them.
(using wire racks will ensure crispiness on the bottom while baking).
- Bake for 30 mins. Check for doneness- Add time, if needed.
Notes:
This recipe is for 8 VERY generous, filling portions. If this is too much, cut the recipe in half, save half of the fathead dough for a pizza crust later! The pictures were taken from only making a half recipe.

Fathead Pizza Crust- w/ Oat Fiber by Kris
Makes: 8 slices
Ingredients
- 6 oz. Shredded Mozzarella
- 1 oz. Original Real Cream Cheese Regular By Philidelphia
- 1 Large Brown Eggs by Cherry Lane
- 1/2 c. Blanched Almond Flour by Nature’s Eats
- 2 tbs Organic Oat Fiber Gluten Free by Anthony’s
- 2 tsp Baking Powder
- 1 tsp Organic Stevia Blend by Pyure
- 1/8 tsp Himalayan Pink Salt
Instructions
- Preheat oven to 400 degrees.
- Put mozzarella in a medium bowl, microwave 1 minute.
- Add cream cheese, then microwave another 30 seconds until melted, stir well.
- Add in egg, mix until paste like dough.
- Add almond flour, oat fiber, baking powder and seasoning- mix until well incorporated.
- Wet hands and spread dough thin on parchment paper.
*If too sticky- use another piece of parchment paper over top and roll with rolling pin.
- Poke some holes with a fork (to keep from bubbling while baking).
- Bake for 10 minutes.
- After 10 minutes, pull out and flip crust over, add toppings.
- Continue cooking for 14 -16 minutes or until slightly brown and golden.

Really good but should be served with tomatoes and salad with avocado on the side.
