Keto Bacon Pancake Muffins

I know how breakfasts can be a struggle on busy mornings. I get it. Eggs and bacon are definitely easy, but get immensely boring after a while. Especially when you have kids, the common request is “pancakes!”. Then you have to double the work load, to make your Keto/Low carb friendly foods as well. Let me tell you folks, I have found the perfect solution here!

My daughter loves having pancakes for breakfast. Most kids do, right?! She is a little different though, because her pancakes only have melted semi-sweet chocolate chips. Not even kidding right now. This kid is not a fan of maple syrup. Anything too sweet or artificial tasting, for that matter. I’ve been finger swiping off frosting from cupcakes and such since she was little… Story for another day.

My husband has established a fairly regular routine of making batches of pancakes on his weekends. Then I batch freeze the rest for the upcoming week, so the girl can make up her breakfast in the mornings. She loves being able to fix them up the way she wants, on her own.

I was nervous about making (another) Keto version of a classic pancake, as there are already so many out there. The thought came to me of transforming it into not just a fluffy brown pillow of goodness, but baking them into muffins! Yes, the best of both bread-like worlds. The child always wants sweet breads, homemade, all the time.

The first test batch were plain (without bacon) and turned out perfectly. These were very quickly unanimously approved! Then of course, bacon. That’s when I knew how awesome a muffin could be. I guarantee my family will be wanting them regularly. Here’s some photo’s I took while creating the delicious muffins!

Bacon Pancake Muffins Recipe

This Keto Bacon Pancake Muffins Recipe will be the newest favorite request around your kitchen. These bacon wrapped pancakes are transformed into easy, on-the-go muffins your kids will love and can be made ahead for quick reheating later. The best part, they are super low carb and filling!

Makes: 12 muffins

Keto Bacon Pancake Muffins Ingredients

12 slices Natural Uncured Bacon
2 tbs Unsalted Butter, melted
1/4 c. Swerve, Brown
4 oz. Cream Cheese, softened
4 Large Eggs, beaten
1/2 c. Almond Milk, unsweetened
1 tsp Pure Vanilla Extract
1/2 tsp Organic Apple Cider Vinegar
1/2 c. Coconut Flour by Bob’s Red Mill
1 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Himalayan Fine Pink Salt

Keto Bacon Pancake Muffins Instructions

1.Preheat oven to 400 degrees.
2.Place bacon strips on baking sheet (lined with foil), bake 12 minutes.
3.Let bacon cool, set aside. Turn oven down to 350 degrees.
4.In mixing bowl- Add melted butter and brown Swerve. Mix with a hand mixer until blended.
5.Add softened cream cheese, mix until no lumps.
6.Then add almond milk, eggs, vanilla, apple cider vinegar. Blend well.
7.Whisk together dry ingredients in a small bowl, then add to wet. Blend until incorporated.
8.Grease/spray each muffin cup, then line each with one strip of bacon.
9.Scoop 2 big spoonfuls of batter into each bacon lined cup.
10.Tap the tray on the counter, to release any trapped air bubbles.
11.Bake @ 350 for 24 minutes. (oven temps may vary, check @ 20 mins)
12.Let cool at least 5 minutes before removing the muffins.
13.I highly recommend Lakanto Maple Syrup drizzled over these!

Notes

These can be stored in the fridge for a few days, or frozen to reheat later.
Bacon is optional but is included in nutrition panel. They can be made without (See added photo).
I used Lakanto Maple Syrup drizzled over top of these and it is AMAZING!

    I made these for my husband and he asked me to make them again when he ate the last 2 yesterday! Really easy too. Baking the bacon didn’t work for me–it burned beyond use in 12 minutes and I had to buy another package. That’s my fault for not keeping an eye on it. I cooked round 2 in the microwave and that worked great. Thanks for the recipe!

  2. I’m definitely not a natural cook so I follow recipes exactly in fear I will mess up! With that said, I’m wondering why you have the bacon baked instead of cooking in a pan on the stove-top. I’m trying to learn in order to cook with less anxiety!

    1. I don’t cook much and find baking bacon is easier to cook.
