Keto Pesto Chicken Casserole Recipe

Doesn’t chicken get boring sometimes? Not with this Keto Chicken Pesto Casserole recipe! This is a really easy recipe to whip up too. In fact, I wanna say it only takes about 10 minutes to prep it!

I just made a double batch of this recipe last night and the kids won’t mind leftovers for lunch today! In fact, they insisted! That’s when you know chicken is not boring. Of course, it’s hard to go wrong with this recipe too though. Anything with cream cheese, sour cream and pesto will taste pretty darn amazing! Go ahead and “wow” your family tonight with this dinner recipe! You will be a dinner hero! Promise!

Let me also mention that even though we used chicken breasts in this recipe, you can use any part of the chicken you want. It will still taste amazing. I’ve been known to buy the skinless, boneless chicken thighs and use these too. I love dark meat. Oh, and the chicken breasts will never be dry when you make it in a casserole like this too. It really is super simple.

Keto Pesto Chicken Casserole with Spinach Ingredients

  • 1 -5 oz bag raw baby spinach
  • 6 chicken breasts (about 22 oz)
  • 8 oz cream cheese
  • 4 oz basil pesto
  • 1/2 cup sour cream
  • 1/2 cup parmesan cheese, grated
  • 3 tablespoons Frank’s Red Hot Sauce. (You can also use the same amount of Sriracha too!)
  • 1 cup Mozzarella cheese

Keto Pesto Chicken Casserole with Spinach Instructions

  1. In a medium size bowl, mix the cream cheese, basil pesto, sour cream, parmesan cheese, and Frank’s Red hot sauce until it’s fully combined.
  2. In a 9 x 13 casserole dish, add a layer of raw baby spinach first.
  3. Then place the raw chicken breasts on top of the spinach.
  4. Then spread the cream cheese mixture on top of the chicken breasts until each one is fully coated.
  5. Sprinkle the Mozzarella cheese on top.
  6. Bake it at 350 degrees uncovered for 40 to 45 minutes or until the center of the chicken is done.
  7. Serve warm and enjoy!
