The problem with our family today is trying to get a good meal on the table by dinner time and not have to spend hours on end in the kitchen prepping and cooking. We are all so busy but we also want really good food.
This recipe totally solves that problem! I’ve taken our Authentic Chiles Relleno’s recipe from here and made it into this casserole! You know what else? It makes amazing leftovers! Yes! I plan for leftovers. It makes my life easier. Besides, this dish tastes even better the second day! I usually have leftovers for lunch the next day.
I should also mention that this is a dish you can make ahead of time and freeze it in the freezer. Thank goodness for prep ahead meals, right?!
This recipe also doubles nicely if you need to make it for a large group of people.

Easy Low Carb Chile Relleno Casserole Recipe Ingredients
- 2- 4.5 oz cans of diced green chili drained
- 8 ounces of mozzarella cheese shredded
- 3 large eggs
- 1 can of sliced pimentos drained
- 3/4 cup of heavy cream
- 1/2 teaspoon of salt
- 1/2 teaspoon of black pepper
- 4 oz of cheddar cheese shredded
- cilantro to garnish
- sour cream to garnish
Easy Low Carb Chile Relleno Casserole Recipe Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Grease an 8×8 baking pan.
- Spread drained chilies to the bottom of the pan.
- In a large bowl add remaining ingredients, except for the shredded cheddar cheese. Mix well and layer over the chili. Top with remaining cheese.
- Bake for 35 minutes, or until egg mixture is set and cheese is lightly golden brown.

This chili relleno casserole is I very flavorful. I have tried several similar recipes and this one is by far my favorite. It’s so easy!
