Sugar Free Strawberry Syrup Recipe

We just made a fantastic sugar free strawberry syrup recipe!!  You can make this with fresh strawberries or you can make it with a strawberry extract.  We are going to show you how to make it with an extract because it’s easier!

This recipe is a spin off of our Easy Keto Syrup Recipe that we use as a base for all our syrup recipes.!  This is a sugar free base syrup recipe that can be turned into many different keto syrup flavors!

First thing your probably asking is…  “How hard is it to make this sugar free strawberry syrup recipe?”  Am I right?  Let me just say, if you can boil water (which I know you all can) you can make this recipe!  It really is super easy.

Keto Flavorings to Use:

All you need for this recipe is strawberry extract.  You can make your own, which will take months or you can purchase strawberry extract online or at your local grocery store.

If you plan on making many different sugar free syrups, then I highly suggest you purchase some extracts and flavorings!   I tend to stock up on my favorite flavorings.  We often make a base vanilla or maple syrup recipe.  We use those the most.  You can use vanilla or maple flavor but the most powerful flavor for a maple syrup is Mapleine!

Mapleine is the secret ingredient found in brown sugar.  Yes, that’s right!   All you have to do to make brown sugar is add Mapleine to it!  This ingredient adds a very potent maple flavor so very little is needed.  I always keep this ingredient stocked in my pantry.  In fact, the last time I purchased it I bought the three pack just to share a couple with some close friends who knew nothing about it!

There are tons of other flavorings too.  You can make a sugar free cake batter syrup, sugar free blueberry syrup, sugar free coconut syrup, sugar free peach syrup, or my husbands favor, sugar free banana syrup!!  They even have a cotton candy extract so you can make sugar free cotton candy syrup too!  Think snow cones for the summer time!

Keto Sweeteners to Use:

The next thing you are probably wondering is…  “What type of sugar free keto sweetener should I use?”  Am I right?  What works in this recipe?  We have answers because we’ve tested them all!

I wanted the answer to this question also.  So I tested many sweeteners!  The best part?  They all work well because they are dissolved and boiled in water so it really just depends on the level of sweetness you like.

I have tested these sweeteners and they all work well:

Out of all those sweeteners that I’ve tested, I really like Allulose the best.  It dissolves nicely and doesn’t leave an aftertaste at all.  Allulose does not affect blood sugar, so the carbohydrates it contains are considered non-impact.

My next favorite sweetener is Bocha Sweet or Xylitol.  If you have pets, you might not have Xylitol in your home because it is poisonous to dogs.

Then Monkfruit.  Actually, I like monkfruit in a lot of recipes!  It’s really sweet!

So, use your favorite keto sweetener.  The amount of sweetener will depend on your taste buds.  You can always add more if you like your syrups really sweet.

Keto Thickeners to Use?

The last thing I am certain you will ask is…  “What thickening agent should I use that’s keto friendly?”  This one took a bit of work because not all thickeners are created equally.  Some thickeners have too many carbs.  Some thickeners work better in hot foods.  Some thickeners work better in cold foods.  And then, if you add too much thickener (even the keto friendly ones) it might turn out to be too slimy or too gel like.  The key is the right thickening agent mixed with the right sugar free sweetener with the perfect flavoring.  That’s when you have a winner!

I find Glucomannan to work the best for keto syrups.  Glucomannan is perfect in hot ingredients such as gravy recipes, syrup recipes like this, or even soups!  The general rule is to use about 1/2 tsp of Glucomannan to 1 cup of hot liquid.

When you add Glucomannan to hot powder it dissolves nicely without clumps!  This is super important for a smooth texture in syrup!

We tested Guar gum but Guar gum tends to work best in cold recipes such as ice cream of cold smoothies.  It tends to clump when used in hot liquids.

We test Xanthan gum as well.  I tend to use Xanthan gum in a lot of my baking recipes.  I even use it in some sauces too.  It’s very versatile but adding too much can cause a slimpy or gummy texture.  You can use Xanthan gum in this recipe but you can just sprinkle it in the hot liquid.  You will need to add it to the sweetener before you add the sweetener to the water.  Xanthan gum tends to bind to whatever ingredient it’s added to.  If you just add it to water after the sweetener has dissolved, it will try to bind to the edge of the pan.  You will not get any lumps if you add it with the sweetener before adding it to the hot water.  We tend to use 1/4 tsp of Xanthan gum for every 1 cup of liquids also.

We opted to Glucomannan in this recipe because it’s really smooth and holds it texture even after it’s cooled down.  It’s worth stocking some in your pantry.  The cost of syrups for your coffees or pancakes can be very pricey.  It’s super inexpensive to make your own!  Once you make your own syrup, you won’t ever buy the store bought stuff ever again!  Promise!  It’s too easy.

Keto Syrup Consistency

This recipe makes a keto syrup that is the consistency of syrup but without all the sugar and the carbs.  It is a thick syrup and is pourable!  Some of the keto syrups you buy in the store actually have the consistency of water!  This recipe is much thicker.

If you are trying to recreate a syrup like Jordan’s Skinny syrups, this syrup is a much lighter and less thick consistency.  I would use half the amount of thickener to reach this desired consistency.

Keto Syrup Storage Ideas and Notes:

Since I always make my own syrups, I wanted to invest in some cute syrup bottles and you can seal.  This is totally optional.

The syrup will store nicely in a mason jar if needed.  You might also use up an old syrup container you already have and reuse it!  We found these adorable little glass bottles at our local Dollar Tree store!  Aren’t they cute?!

It’s also important to note that if you use lemon juice or citric acid in the recipe it will double the shelf life of this syrup!  It uses such a small amount that you don’t taste it in the recipe either.

Easy Keto Syrup Recipe Ingredients

Makes roughly 1 1/2 cups of sugar free keto syrup

  • 3/4 cup Xylitol, Bochasweet or Allulose
  • 1/2 tsp Glucomannan powder
  • 1 cup water
  • pinch salt
  • 1 tsp flavoring strawberry extract
  • Optional Ingredient:  Pinch of Citric Acid powder or 1/4 tsp lemon juice.
  • Optional Ingredient:  a drop of red dye if you want a strawberry color. No need as this is just a visual. It won’t change the taste at all.

Easy Keto Syrup Recipe Instructions using Glucomannan powder:

  1. In a small sauce pan, add 1 cup of water and bring to a simmer over medium heat.
  2. Reduce heat down to low.
  3. Add 3/4 cup of keto sweetener and a pinch of salt to the water and stir.
  4. If using, add the citric acid powder or lemon juice and stir.
  5. Once all the sweetener has dissolved, sprinkle the Glucomannan powder over the top of the liquid.
  6. Continue stirring until all the Glucomannan powder has dissolved.
  7. Turn off the heat.
  8. Stir in the 1 tsp of strawberry extract and a drop of red dye, if using.
  9. Use a funnel and add the hot syrup to a container and set it on the counter until it fully cools down.
  10. Seal the container once the syrup has fully cooled.

Store in the refrigerator for up to 2 weeks or 4 weeks if you added lemon juice or citric acid.  This preservative helps double the expire timeframe.

Easy Keto Syrup Recipe Instructions using Xanthan gum:

  1. In a small sauce pan, add 1 cup of water and bring to a simmer over medium heat.
  2. Reduce heat to low.
  3. If using Xanthan gum instead of Glucomannan, omit the Glucomannon and Mix 1/4 tsp of Xanthan gum with 3/4 cup of keto sweetener.
  4. Add the sweetener mix to the hot water and stir.
  5. If using, add the citric acid powder or lemon juice and stir.
  6. Turn off the heat.
  7. Stir in the 1 tsp of strawberry extract and 1 drop of red dye, if using.
  8. Use a funnel and add the hot syrup to a container and set it on the counter until it fully cools down.
  9. Seal the container once the syrup has fully cooled.

Store in the refrigerator for up to 2 weeks or 4 weeks if you added lemon juice or citric acid.  This preservative helps double the expire timeframe.

  • In a small sauce pan, add 1 cup of water and bring to a simmer over medium heat.
  • Reduce heat to low.
  • Add 3/4 cup of keto sweetener and a pinch of salt to the water and stir.

  • Store in the refrigerator for up to 2 weeks or 4 weeks if you added lemon juice or citric acid.  This preservative helps double the expire timeframe.
