We just made the most delicious Keto Lemon Bars Recipe I’ve ever tried! I love how I can take an old Weight Watchers Lemon Bars Recipe and make it keto!!

I remember devouring those weight watchers bars and thinking I was doing pretty good with my rare treats on the diet. This just goes to show that the Keto Diet has taught me so much about my health and I feel so much better because of it.

Keto Lemon Bars Recipe Ingredients

  • 1 ⅓ cups almond flour
  • 5 tablespoons light brown sugar alternative
  • 8 tablespoons cold butter, quartered and cubed
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cup Sukrin Icing (or other Powdered Sugar Alternative)
  • ¾ cup Lemon Juice
  • 2 teaspoons lemon zest

 

NOTE:  Sukrin Icing is a powdered confectioner’s sugar substitute that is keto friendly.  It’s made with mostly erythritol and 2% stevia.  This is the perfect combination so you won’t get that bitter aftertaste with too much stevia in some keto sugar replacements.  It’s also good to note that you can use granulated sugar too.  Just pulse it in the food processor to blend it into confectioners consistency before you use it.

 

Keto Lemon Bars Recipe Instructions

  1. Preheat Oven to 350 degrees.
  2. In a food processor mix the flour and brown sugar.
  3. Next, add in cold butter and pulse until incorporated and mixture is a “small pea consistency”.
  4. Place the crust in the oven and bake for 10-15 minutes, until golden brown.
  5. While the crust is cooking, make your filling.
  6. Place eggs in a bowl and whisk together.
  7. Next, add in remaining ingredients and blend until smooth.
  8. Once the crust has finished baking, immediately pour your filling over the top.
  9. Carefully place back in the oven.
  10. Bake for 15-25 minutes until the mixture has set.
  11. Allow to cool and dust the top with powdered sugar for a decadent and sweet treat!

    Can I replace the brown sugar for stevia, there is any brown stevia?
