Even Better Keto 90 Second Bread Recipe

There’s no honey in this “Even Better” Keto 90 Second Bread Recipe, but it tastes just like a honey wheat English muffin! The even better part, it’s only 1 NET CARB for the whole thing!!

I have always been pretty particular about the types of bread I like and don’t like. Growing up, I didn’t like seed breads or rye bread. When I was a kid, I think all I ever had was white bread, cheapest there was. Was there even such a thing as “good bread” back then? I wouldn’t have known any better.

As I got older, I discovered such things, like fresh warm sourdough and honey wheat. Ohhh….. the love for bread was deep. I could live off just a good bread. At one point, I almost did. As a young adult, broke and trying to make it on my own- sometimes I would spend my last dollars on a warm loaf of bread, without a second thought about it.

The thought of not having bread, when I started my Keto journey, could have brought me to tears. Forget about the sweets and other junk, what about BREAD?! I could die… What is my life coming to, if I can’t have the best food ever? I can’t even describe it further, as it makes me anxious even at the thought of it.

I learned very quickly, I am going to have to survive.. keep it simple, cut the carbs and don’t get overwhelmed. Bread was still in the back of my mind, from day one. So, I fought through it, until I was comfortable enough to start experimenting with Keto/Low Carb baking. It didn’t take long to figure out how to make a few recipes that were quick and simple.

I’ve definitely had a few fails, but mostly.. the 90-second bread and mug cakes were easy and satisfying to get a bread fix. Then, I created the 90 Second Baked Bagel Recipe. That is good! I was super impressed with my success. I felt like I still needed something more though.

One of my favorite breads for years was a honey wheat English muffin. Toasted, spread with some peanut butter or cream cheese and jam….. Awwww my goodness…. I can smell it in my nose and taste it, just thinking about it. Ugh. Ok, it was time to get to business in the kitchen. Let’s figure this out!

I did some research and found others using Oat Fiber in their bread recipes. I found my starting point. So, I read and read some more, then I ordered a bag. Trial and error left me with, this brand is nasty. It just isn’t good.

I’m too stubborn to quit though, so I bought a different brand of Oat Fiber. Hazaa! I found the right one! This was it, I found my favorite English muffin. It was exactly as I had hoped and brought me so much satisfaction to have my bread again! Now, I enjoy it often for a sandwich or side toast.

Even Better Keto 90 Second Bread Recipe Ingredients

Even Better Keto 90 Second Bread Recipe Directions

  1. Choose your vessel – microwavable mug or bowl.
  2. Melt the butter, about 30 seconds.
  3. Swirl it around in the bottom.
  4. Add the rest of the ingredients, mix until incorporated.
  5. Microwave 90 seconds. Let cool.
  6. You can eat as is- OR
  7. Slice in half and toast on a pan with butter or oil, until browned.
  8. I like to use my Grill Master and grill it until toasty!

Not only is the Oat Fiber good for you, but this bread is even lower Net Carb than most 90-second bread recipes! Which means you can add more good stuff to it! Oat fiber is NOT oat flour.

I prefer Anthony’s Organic Oat Fiber, it tastes better than others I’ve tried.

  1. Thanks for posting this. I’ll be ordering some anthony’s oat fiber, as the one I have bought tastes rancid. And I love that it’s s calorie free and gives an almost silky texture to some things so can’t wait to get it so that I can try your recipe!

    Love that tgisnis using oat fiber! Taste and texture is great, tried a tiny piece with butter and was great. I’ll try making a grilled cheese sandwich once cooked. Thank you for sharing.

  4. I don’t use a microwave – mine died and never replaced it since microwaving is not really good for food.
    is there a way to make this using the oven? I am loving your video chats with Dr Boz; very informative and fun to watch.

    1. Just make it in a skillet, using a litle of butter. It will surely taste better than cooking it in a microwave.

    I love this recipe! I have discovered that if you combine the dry ingredients and a little extra granulated sweetener (I use golden monkfruit), add softened (not melted) butter, and lastly whisk in a beaten egg (it will remain slightly lumpy), and microwave for 1 1/2 minutes, you will have french toast virtually indistinguishable from full carb versions. With the simple change of the way it is combined you get an entirely different but incredibly delicious dish.

  7. Was surprised how good this tastes. It looked like a big sponge when it first came out of the mug, but then I sliced it, buttered & toasted it in the skillet. It will be a new staple in our meal plan. Thanks so much for this recipe.

    This is the first 90 second bread that I actually liked. Although personally speaking I may not add the age I next time. I slathered it with cream cheese and topped it with everything but the bagel seasoning. Thanks!

    I just made this and I agree it is great. I made 3 separate batches (starting with only 2) I cooked 1 in the microwave @ 90 seconds and the other I poured into my mini griddle, (i ordered a dash chaffel maker and ended up with the griddle). The micro version looks the same as any other 90 second bread recipe until you cut it open. It looks like bread not eggs. It bites like bread as well. The second one I ended up having to cook a while and set a cast iron on top to keep the griddle closed. That is when I decided on the 3rd batch. The 2nd batch looked just like a pancake, nice on the inside, less air pockets which I would assume came from me clamping the griddle closed. The third, I cooked the single recipe in 2 batches in the griddle. We then cooked a hamburger patty and shared a hamburger for the first time in 2 years with bread. I now have a slice in the fridge and the freezer, pending results tomorrow. I am new to using oat fiber and I’m loving it already! I’ve recently switched my younger kids to all keto and was having trouble with making a peanut butter sandwich for lunches! Thank you!

    Delicious and not eggy tasting at all. This will be my new, go to quick bread.
    What wattage is your microwave? I did it for 60 seconds, as I do other almond flour breads, and it was cooked through.

    Thank you very much for this recipe! I am thrilled that I came across it – we made it last nite in a mug – couldn’t wait had to try this out. VERY PLEASED – flavor, texture, fluffiness – amazing. In a mug this made a tall tower – perfect for cutting into 4 pieces the perfect size for a couple of sausage ‘biscuit’ sandwiches. Today, I made it that way again for my adult son’s breakfast – with just that – 2 sausage sandwiches and scrambled eggs on the side (although we could of course have put the eggs on the sandwiches. Then I made a batch in a bowl and made me a bacon and egg sandwich which was perfect. Like another reviewer said, I, also, miss poached egg on English muffin – but no more! Thank you so much for your time perfecting this and sharing with us.
