I really had to think outside of the box, so I researched for a scampi sauce recipe or shrimp dinner ideas that would maybe be a bit low carb.

It finally hit me that I needed to use zoodles! I have used zoodles in the past, but didn’t even think about using them until now. I really wanted to make healthy shrimp scampi and I think zoodles is the way to do it.

Low Carb Shrimp Scampi with Zoodles Recipe Ingredients

  • 3 zucchini spiralized
  • 1 stick of salted butter
  • 1/2 tablespoon of olive oil
  • 1 pound of raw shrimp
  • 7 cloves of garlic minced
  • 2 lemons cut in half
  • 1/4 cup of white wine
  • 2 tablespoons of parsley fresh or dried
  • salt and pepper to taste

Low Carb Shrimp Scampi with Zoodles Recipe Instructions

  1. In a large pan over medium-high heat, melt butter and warm oil together.
  2. Add in garlic and cook until fragrant, about 1-2 minutes.
  3. Next, add in wine and cook 2-3 minutes, until wine reduces.
  4. Now add in shrimp, season with salt and pepper, cook 4-5 minutes, or until shrimp is pink.
  5. Add in lemon juice and parsley.
  6. Toss in spiralized zucchini and cook until warmed through.
  7. Serve.

      A stick of butter is 4 ounces or 1/2 cup. A package of butter is 1 pound/16 ounces/4 sticks.

    Can I just leave out the wine or is there something else I can use instead? It was a migraine trigger in the past so I never have it on hand!
