The other morning, I woke up wanting something yummy and out of the ordinary. I decided to think about all the breakfast ideas I had and go with quiche. I mean, it’s a healthy breakfast and it’s a pretty low carb breakfast option, so why not go with it?
I had to think if I knew how to make quiche or not and after a while, I did remember. It’s a high protein breakfast that will do anyone some good. It’s also an easy casserole that I could teach my kids how to make.
I like to make my low carb breakfast casserole as a crustless quiche. If you thought quiche was easy before, it’s going to be even easier now. The best part is this is a quick quiche recipe or as some others would call it a quick breakfast idea.
Quiche should be made to order how you like it. I like to get out a number of quiche ingredients. I let each person in my house decide how they’re going to enjoy their quiche. I mean this is a basic quiche recipe that allows you to switch it as you like.

Low Carb Breakfast Casserole with Steak, Onions and Mushrooms Recipe Ingredients
- 2 tablespoons bacon fat or olive oil
- 1 lb skirt steak
- salt and pepper to taste
- 1 onion julienned
- 4 oz mushrooms sliced
- 3 plum tomatoes chopped
- 12 eggs
- 1 tablespoon heavy cream
- 1/4 teaspoon ground thyme
- 2 tablespoons of freshly chopped parsley
Low Carb Breakfast Casserole with Steak, Onions and Mushrooms Recipe Instructions
- Preheat oven to 350 degrees Fahrenheit. Season steak with salt and pepper.
- In a large pan over medium high heat, melt bacon fat or heat olive oil.
- Add in steak and onions and cook 3 minutes before adding in mushrooms. Lower heat to medium and cook just until mushrooms have softened. Remove pan from heat and set to the side.
- In a large bowl add eggs, cream, and thyme -whisk ingredients together. Mix remaining ingredients and salt and pepper.
- In a large greased 9×13 baking dish, add in steak, onions, and mushrooms. Pour egg mixture over the steak and bake for 20-25 minutes, or until eggs have set.
