Lettuce-wrapped sandwiches are a healthy alternative to traditional bread wraps. They’re also a great way to make use of leftover vegetables and protein, especially in the summertime when fresh produce is abundant!
There are a few reasons I really like making lettuce wrapped sandwiches:
• Provide a guilt-free alternative to higher carb sandwiches
• Keep you fuller and more energetic for longer because it takes less time to digest
• Lower your cholesterol with better blood sugar regulation
• Easily swap bread for lettuce and still make a great sandwich that has a slight extra crunch which I love.
• Sometimes people are out of time or energy to cook and Lettuce Wraps will do the trick
• Save more calories on a low carb diet by swapping low carb flour tortillas with fresh lettuce leaves
Lettuce Options:
Iceberg lettuce is a great options, but it can be hard to chew.
Butterhead lettuce is another great option, which has a crisp texture and mild flavor that’s easy on your stomach.
Romaine lettuce is a great ingredient for crisp and refreshing wraps that you can eat as a meal or snack. It’s soft enough to be folded, but it also holds its own when wrapped around crunchy vegetables like carrots or cucumbers. This is my favorite lettuce option.
Types of vegetables to use in your sandwich:
*peppers (green, orange, yellow, red)
*cucumbers
*grated carrots
*sliced radishes
*sliced onions of your choice
*celery for extra crunch
*cabbage
*mushrooms
*zucchini
Here’s how you can create your own lettuce-wrapped sandwich:
– Begin by cutting of pieces of romaine lettuce and removing the core end. These leaves of lettuce will be your bread replacement and the base of your low carb and keto friendly sandwich. Lay them out on a sheet of parchment paper. This paper will be used to wrap your sandwich once you are done assembling it.
– Place filling protein first. You can use any sliced protein you want. Protein options are: chicken, beef, ham, turkey, salami, pepperoni, roast beef, bacon, tuna, salmon, etc…
– Add vegetables to the sandwich filling. You can include: carrots, cucumbers, bell peppers (red or green), tomatoes, sliced onions, banana peppers, jalapenos, olives, avocados, etc…
– Drizzle dressing on top of your lettuce wrap before wrapping it up! We recommend using either avocado oil mayo mixed with a little Sirarcha at a one to one ration for a keto friendly option or any of your favorite keto friendly salad dressings will work too.
-Wrap the sandwich in parchment paper. Start by rolling the outside of the romaine lettuce while holding the ingredients inside the roll. Keep the parchment paper outside of the sandwich roll and use it to hold all of the ingredients together. Then slice the lettuce wrapped sandwich in half and serve.
Enjoy!
