Enjoying a summertime treat is not hard on the keto diet. This recipe is super easy to make. You don’t need a lot of ingredients or even an ice cream machine. All you need is a simple blender for this keto popsicle recipe!
It’s no secret…summer in Texas is HOT! Boy, is it hot outside?! We came back from the pool the other day and enjoyed these keto popsicles! My kids didn’t even miss the sugar! They didn’t know the difference.
Here’s a tip! You don’t need the Xanthan gum powder in the recipe if you don’t have it on hand. With it, this recipe creates a nice thick and creamy type texture for your frozen popsicles so I would definitely keep it on hand. If you don’t have any, be sure to grab some from the store the next time you go. Either that or order some on Amazon. I’m impressed with the texture. You will too! It’s SO worth it! Not only that, but I use it in many other recipes when I need to thicken a gravy or something similar too!
On another note, be sure to use your favorite sugar substitute too. I prefer Monk Fruit. If it doesn’t come in a powdered form or you don’t have a powdered form on hand, you can simply pulse it in a blender or food processor for a few minutes until it turns into a powder. It’s super simple and easy to do. No need to buy the powdered form if you don’t mind the extra step.
Personally, I have not tried this recipe with anything other than coconut milk. I like the rich and creamy texture it gives these frozen desserts. I would imagine you could try this with almond milk if you prefer too though.

- 1/2 cup Fresh Strawberries
- 1/4 teaspoon Xanthan Gum Powder
