Keto Soft Pretzel Recipe
I just made the most delicious Keto Soft Pretzel Recipe on the planet! Don’t worry though… I will tell you exactly what not to do when making this recipe. I’ve made it about 4 times to get it JUST RIGHT! All of the recipes I made tastes great but the texture is what had me retrying this recipe over and over again.
There are four very tricky parts to this recipe. If you follow it exactly, you won’t have any problems.

Optional Keto Soft Pretzel Recipe Flavors I’ve Tried
Buttery Keto Soft Pretzels
Top the base keto soft pretzel recipe with melted butter and serve warm. We love to sprinkle a bit of parmesan cheese over the melted butter for added flavor too!
Salted Keto Soft Pretzels
Sprinkle the top of the keto soft pretzels with pretzel salt after the egg wash step. Bake as directed.
Garlic and Onion Keto Soft Pretzels
Add one teaspoon of onion powder and 1/2 teaspoon of garlic powder to the base of this soft pretzel recipe to make the garlic onion Keto soft pretzels. Mix these seasonings in with the almond flour. Bake as directed.
Pepperoni and Cheese Keto Soft Pretzels
Add mini pepperonis and about 1 teaspoon of your favorite shredded cheese to the top of the keto soft pretzel recipe to make pepperoni and cheese Keto soft pretzels and bake as directed! You will add these ingredients right after the egg wash step. The egg wash helps keep these ingredients sticking to the keto soft pretzel!
This version is a favorite with the kids. You can use Rao’s Marinara sauce as a dipping sauce for these pretzels too.
Italian Parmesan Keto Soft Pretzels
Sprinkle the top of the Keto soft pretzels with parmesan cheese mixed with Italian seasoning blend. I combine about 1/4 cup with a 1/2 teaspoon of Italian Blend seasoning with a pinch of salt. Sprinkle this combination on top of the pretzels and bake as directed.
Cinnamon Sugar Keto Soft Pretzels
Use your favorite keto approved sweetener with a small amount of cinnamon to make the sugar free cinnamon topping. Melt butter and spread it over the top of the warm keto soft pretzels. Then sprinkle a small amount of the cinnamon sugar on top. It’s amazing!!
I tend to use Swerve, Erythritol, or Pyure All purpose blend for any sweet version of the keto soft pretzels.
Everything Bagel Seasoning Keto Soft Pretzels
Sprinkle the top of each bagel with Everything but the Bagel Seasoning right after the egg wash step. Bake as directed.

Things you need to know before you make this Keto Soft Pretzel Recipe
Once you heat up the cheese to make the dough, you need to work in a timely manner. The cheese will cool down if you wait too long and it will not mold into the shape you want if it gets cold. There’s a trick though! You can simply reheat the dough in the microwave for 15 to 30 seconds to make it soft again. If you find the dough is too hard to shape into a pretzel, don’t hesitate to reheat the dough.
This Keto soft pretzel recipe cooks perfectly between 15 to 17 minutes. Watch it carefully because you don’t want them to burn. I always set my Amazon Alexa with a time of 15 minutes and I usually leave it another minute or two. I always use my Amazon Alexa voice command to set kitchen timers. One time I did it on a Facebook live video and set off everyone’s Alexa timers! LOL!
I do use Xanthan Gum in this recipe. This is what makes this recipe soft and chewy! I wouldn’t skip this ingredient because you won’t get the same results. If you don’t have any Xanthan Gum, I would highly suggest you order some from Amazon if you plan to cook or bake any other type of low carb or Keto friendly recipes. I use it often!
When rolling out the dough, you will want to do it on a large piece of parchment paper or a large silicone mat. I would highly suggest investing in buying a silicone mat if you don’t have one because it’s my preferred choice! It doesn’t slip and slide when you try to roll out the dough like this. The parchment paper works to help with sticking but you have to try and hold it down while your rolling the dough or tape it down in place.
Keto Soft Pretzel Recipe Ingredients
Makes 8 Keto Soft Pretzels
- 2 cups part-skim mozzarella cheese, shredded
- 1/4 cup parmesan cheese
- 1 oz cream cheese, full fat
- 1 teaspoon baking powder
- 1 1/2 cups almond flour
- 1 teaspoon Xanthan Gum
- 1 large egg
- 1 egg yolk for the egg wash topping
Keto Soft Pretzel Recipe Instructions
- Preheat the over to 350 degrees and lay out all the ingredients premeasured before you begin.
- Add the shredded cheese, cream cheese, and parmesan cheese to a microwave safe bowl and heat it for 1 1/2 to 2 minutes until the cheese has melted. (You can do this on the stove top over a double broiler too if you want to avoid the microwave)
- In a separate bowl, combine the almond flour, baking powder, xanthan gum. Mix until all the ingredients have fully come together.
- Add the flour ingredients to the warm cheese mixture and add 1 egg. Use a spatula to mix the ingredients together as much as you can (see the video for further instructions).
- Pour the ingredients onto a piece of parchment paper or a large silicone mat to avoid sticking when you roll out the pretzel dough.
- Separate the dough into 8 equal parts.
- Roll each dough ball into a long snake type form. Pull the ends crisscross over the top of a circle to make the pretzel shape for each.
- Place on a baking sheet lined with parchment paper or a silicone mat to avoid any sticking.
- Mix one egg yolk in a small bowl and spread the egg wash mixture over each keto soft pretzel. One egg yolk will cover all 8 pretzels.
- Add any optional topping suggestions listed above.
- Bake at 350 degrees for 15 to 17 minutes.
