Keto Smores Chaffle Recipe
Just about EVERYONE loves a delicious S’mores, right?! This Keto S’mores Chaffle Recipe is going to make your head spin, in so many great ways!
The internet is losing their minds over this crazy thing called a CHAFFLE! Now, there are copious amounts of ways that you can create this amazing Keto/Low Carb treats. This one will become your #1 go-to for a quick treat!
Keto Smores Chaffle Recipe
Makes: 1 Smores sandwich
Keto Smores Chaffle Recipe Ingredients
For the Chaffles (makes 2 slices):
- 1 large Egg
- ½ c. Mozzarella cheese, shredded
- ½ tsp Vanilla extract
- 2 tbs Swerve, brown
- ½ tbs Psyllium Husk Powder (optional)
- ¼ tsp Baking Powder
- Pinch of pink salt
- ¼ Lily’s Original Dark Chocolate Bar
- 2 tbs Keto Marshmallow Creme Fluff Recipe
Keto Smores Chaffle Recipe Instructions
- Make the batch of Keto Marshmallow Creme Fluff
- Whisk the egg until creamy.
- Add vanilla and Swerve Brown, mix well.
- Mix in the shredded cheese and blend.
- Then add Psyllium Husk Powder, baking powder and salt.
- Mix until well incorporated, let the batter rest 3-4 minutes.
- Prep/plug in your waffle maker to preheat.
- Spread ½ batter on the waffle maker and cook 3-4 minutes.
- Remove and set on a cooling rack.
- Cook second half of batter same, then remove to cool.
- Once cool, assemble the chaffles with the marshmallow fluff and chocolate:
- Using 2 tbs marshmallow and ¼ bar of Lily’s Chocolate.
- Eat as is, or toast for a melty and gooey Smore sandwich!

These can be made with Cream Cheese (instead of mozzarella), although I found they aren’t are crispy! If you don’t mind them softer, here’s the recipe.
For the Chaffle (makes 2 slices)
- 1 large Egg
- 1 oz cream cheese softened
- ½ tsp Vanilla extract
- 2 tbs Swerve, brown
- ½ tbs Psyllium Husk Powder (optional)
- ¼ tsp Baking Powder
- Pinch of pink salt
The Psyllium Husk Powder is optional, but it REALLY gives the chaffle that “graham cracker” type flavor, I wouldn’t skip this. PLUS, the added fiber is a bonus!

You can make a batch of the Keto Marshmallow Creme Fluff Recipe ahead of time and store in the fridge until ready to use. If making the same day, once the Xanthan Gum is incorporated, it will be firm enough to use right then.
Another excellent idea for these amazing Smores- (as if they aren’t tasty enough):
Drizzle them with (my favorite) ChocZero Chocolate Syrup and maybe a wee-bit of warmed All Natural Peanut Butter!! Ohhhhhh yeah.
I find that I really love using my JB Chef Culinary Butane Torch for making the marshmallow creme nice and toasty!
