Keto No-Bake Cookies 

Ingredients

  • 1 cup shredded coconut, unsweetened
  • 1 tablespoon cocoa powder
  • 2 tablespoons granulated erythritol, add more to taste
  • 2 tablespoons butter
  • 3/4 cup peanut butter
  • 1/2 cup pecans
  • 1/2 tablespoon flaxseed + 1 tablespoon water

Prep Time: active time: 20 min if making flaxseed egg in advance (if not, add 10 to 15 minutes).

Instructions

  1. Mix flaxseed meal with water and let it sit for 10 to 15 minutes, or until it thickens.
  2. Melt butter and erythritol in a medium bowl in the microwave.
  3. Add melted butter and peanut butter into a medium bowl. Stir to combine.
  4. Add cocoa powder, flaxseed mixture, and mix.
  5. Finally, add shredded coconut and chopped pecan nuts. Combine ingredients.
  6. Roll the cookie dough into 12-15 cookies, press them down to flatten.
  7. Refrigerate for at least half an hour to harden before serving. 
  8. Store cookies in the fridge in an airtight container for up to one week.

  • Replace pecans with other nuts or even dehydrated fruit.
