Jen’s Keto Baking Mix
I came up with something really great! I shall call it Jen’s Keto Baking Mix! If you are counting net carbs then you are going to love this! It’s only 1 net carb per serving!! That’s 1 net carb for a 1/4 cup of keto baking mix! The texture is absolutely amazing!
I’ve been working on a homemade baking mix for some time now. It’s a tricky process but I’ve got it down now! This is what I will use from now on to make my keto mug cakes! It tastes like an actual cake or bread texture! OMGosh, it’s good!
This recipe makes about 5 1/2 cups of baking mix flour which comes out to 22 – 1/4 cup servings.
I use 1/4 cup servings in all the mug cakes I make using this keto friendly baking mix.
We made an amazing chocolate chip mug cake and included the recipe below. We will post many more recipes that use this recipe! I promise you that!
Jen’s Keto Baking Mix Ingredients
2 cups Oat Fiber
1 cup Golden Flax Meal
1 cup Coconut Flour
1/2 cup Almond Flour
1/2 cup Isopure Whey Protein Isolate (unflavored)
1/4 cup Collagen Peptides (about 2 scoops)
Jen’s Keto Baking Mix Instructions
Mix all the ingredients together and store in an airtight container in a cool/dry place.

Ingredients
- 2 cups Oat Fiber
- 1 cup Golden Flax Meal

How Long Can You Store Jen’s Keto Baking Mix
If sealed properly and stored in an airtight container in a cool, dry place, this homemade baking mix could have a shelf life of about 6 to 9 months. Be sure to check for changes in odor and color to make sure it’s still fresh before using it. I store it in these Prepworks by Progressive airtight containers and I love it. They are high-quality containers that seal nicely. They also have an insert that allows you to scrap the scoop to a perfect measurement when pulling out a cup of flour from the container. It’s a nice little feature to have with these containers.
Chocolate Chip Mug Cake Recipe and Instructions:
- 1 tbs butter
- 1 tablespoon sukrin gold (or use your favorite keto friendly sweetener)
- 1/2 teaspoon vanilla
- 1 egg
- pinch pink salt
- 1/4 teaspoon baking powder
- 2 tablespoons of water
- 1/4 cup Jen’s Keto Baking Mix
- 1/8 cup Lily’s chocolate chips
- Add butter to a microwave safe mug and nuke it for 15 seconds until the butter has fully melted.
- Add the remaining ingredients except for the chocolate chips and stir well.
- Now mix in the chocolate chips. (the chocolate chips will sink to the bottom so add them right before you pop it in the microwave)
- Microwave it on high for 60 seconds.
Optional: Top with sugar-free syrup.

Banana Muffin Mug Cake Recipe and Instructions:
- 1 tbs butter

- 1 egg
- pinch pink salt
- 1/4 teaspoon baking powder
- 2 tablespoons of water
- 1/8 tsp Banana flavoring
- 1/4 cup Jen’s Keto Baking Mix
- Optional: Add nuts if you want banana nut bread.
- Add butter to a microwave safe mug and nuke it for 15 seconds until the butter has fully melted.
- Add the remaining ingredients and stir well.
- Microwave it on high for 60 seconds.
Optional: Top with sugar-free syrup.
We use a ton of different flavorings to change up this recipe. Here are some of the flavorings we love! We use these in lots of our dessert recipes. These are amazing in coffee drinks, tea drinks, and ice cream recipes too!
Do you think i can substitute MCT oil powder for collagen peptides?
Oh boy, this would be hard to say because I have not tested them. My gut tells me that this may not be a good substitute because the collagen adds a certain moisture to cake and bread recipes. I don’t think the MCT oil would do the same.
The picture attached to this recipe includes Glucomannan. Did that ingredient get left out of the recipe or is the picture from something else? Thanks!

thickener like xanthan gum? This recipe sounds amazing…thanks for it and all your hard work
This is the best mug cake mix I’ve ever tried. and so easy to whip up. First one I made was chocolate chip, second one was gingerbread with dollop of keto whipped cream. It has the texture and taste of real cake. I have a small microwave, so I set time for 2 minutes. Perfect.
