Keto Cornbread Chaffle Recipe

Wow!  I just made the best Keto Cornbread Chaffle Recipe of my life!  Did you know that you can have cornbread while doing keto?  You can!  Just don’t add the cornmeal.  Instead, use a flavor that tastes like actual cornbread!  There are so many wonderful flavor options to get the flavors you love without the guilt.  This recipe is proof!  I can have cornbread without the corn!  You have got to try it to believe it!

The next thing you are probably immediately asking is…  where do I buy this cornbread extract that you are talking about, right?  I have yet to find it in any of my local stores.  I’ve only purchased it online.  And… it’s not cheap!  It’s a good thing that a little bit goes a long way because I see me using this bottle of corn extract for a long time to come.

 

The other thing that makes this cornbread extra special is an optional ingredient I use.  It’s jalapenos!  You can add a small amount of extra flavor by adding some thinly sliced fresh jalapenos or pickled jar jalapenos to this recipe.  My kids are not fans of super spicy foods.  So I tend to make this recipe with the pickled jalapenos because it adds the flavor with very little of the spiciness they don’t like.

Keto Cornbread Chaffle Recipe Ingredients

  • 1 egg
  • 1/2 cup cheddar cheese, shredded (or mozzarella)
  • 5 slices jalapeno, optional – picked or fresh
  • 1 teaspoon Frank’s Red hot sauce
  • 1/4 teaspoon corn extract (this is the secret ingredient that is a must!)
  • pinch salt

 

Keto Cornbread Chaffle Recipe Instructions

  1. Preheat the mini waffle maker
  2. In a small bowl, whip the egg.
  3. Add the remaining ingredients and mix it until it’s well incorporated.
  4. Add a teaspoon of shredded cheese to the waffle maker for 30 seconds before adding the mixture.  This will create a nice and crisp crust that is absolutely fantastic!
  5. Add half the mixture to the preheated waffle maker.
  6. Cook it for a minimum of 3 to 4 minutes.  The longer you cook it the more crispy it gets.
  7. Serve warm and enjoy!

There is a trick to this Keto Cornbread Chaffle recipe! It's the best and most real tasting cornbread that is keto friendly and doesn't use actual corn!

Ingredients
  

  • 1 egg
  • 1/2 cup cheddar cheese shredded (or mozzarella)

    Soooooo wonderful but soooooo expensive fir the flavoring…. if I buy the 4oz bottle (to save $)… these dill run about 31cent each for that sought after corn flavor?

    These are good and crunchy. I didn’t think they tasted like cornbread, I felt like the dominant flavor was cheese.
