Sugar Free Keto Caramel Sauce Recipe
We made a delightful Sugar Free Keto Caramel Sauce Recipe that I’m super excited to share with you!
The type of sweetener you use in this recipe makes all the difference in the world. I am in love with allulose! It’s a keto friendly sweetener that won’t spike your glucose. Allulose comes in a liquid syrup form or a powdered form. I used the powdered allulose sweetener in this recipe.
This recipe can be doubled with no issues at all. I like to use a shallow pan so the caramel cooks evenly and quickly. Large frying pans work best for this recipe honestly.
Let’s talk about Yacon syrup for a minute. Most caramel recipes use molasses to help with the caramel flavor and texture but Yacon syrup is a great keto alternative. A little bottle is a bit pricey but I’ve had my bottle for over a year and a little bit goes a long way! You might be asking yourself “What is yacon syrup?” Yacon syrup comes from the roots of the yacon plant. Yacon is a tuber, much like a sweet potato, and its roots can be made into a low-carb syrup that’s a natural sweetener. Yacon roots are crushed to release juice. That juice is then filtered and evaporated until a thick syrup is left. Some studies show yacon to improve insulin resistance and stabilize blood sugars.
I have not found Yacon Syrup in my local grocery store yet. I’ve had to order this off of Amazon.

We also love to drizzle the sugar free sauce over some keto vanilla ice cream!
I might also be known to eat it by the spoonfuls too! It’s so good all by itself too.
Sugar Free Keto Caramel Sauce Recipe Ingredients
- 1/2 cup allulose sweetener
- 1/2 cup heavy whipping cream
- 1 tbs butter
- 1 tsp Yacon syrup
- 1 tsp vanilla extract
- 1/4 tsp salt
Sugar Free Keto Caramel Sauce Recipe Instructions
- In a medium size frying pan or sauce pan, add the heavy cream and butter and cook it over medium heat. I like to use a frying pan because the pan is much wider and you can stir these ingredients with a whisk easier.
- Once the butter has melted with the cream, add the remaining ingredients.
- Continue whisking the ingredients with a hand whisk. It will take about 7 to 10 minutes to start to boil.
- Once the mixture starts to boil it will get a bit thicker. It will still have a nice brown color. When you notice the caramel color start to get really thick bubbles, it’s ready! This will take about 15 minutes total.
- Pour the hot Sugar Free Keto Caramel Sauce into a glass mason jar and allow it to cool. The mixture will thicken a bit more when it cools.
Note: Allulose sweetener in this recipe is perfect because it caramelizes perfectly without crystalizing like some other keto sweeteners do. I would not substitute the allulose sweetener.
Makes about 1 1/2 cups of Sugar Free Keto Caramel Sauce.
Store this caramel sauce in the refrigerator for up to two weeks in an airtight storage container such as a mason jar with a tight seal.

Do you think I could sub brown rice syrup for the Yacon Syrup in this recipe?

Could I use monk fruit as sweetener? I am very sensitive to all other sweeteners. This looks fabulous!
Overall great recipe and decent taste. I followed it exactly except for the yacon syrup – subbed that with monkfruit syrup (although I realized afterward that I had allulose syrup). The aftertaste is a tiny bit bitter which might come from cooking allulose, but it certainly does brown up nicely. The only other thing is I definitely didn’t get 1.5 cups; came out to around 8 oz.
