3 Ingredient Keto Marshmallow Fluff Recipe
We just made a super simple 3 Ingredient Keto Marshmallow Fluff Recipe!!
This recipe was made with liquid Allulose sweetner. We made another Keto Marshmallow Creme Fluff recipe with Swerve, heavy cream and Xanthan gum. This one is totally different and it yields an extra fluffy result too!
Guess what?!! You can also toast this keto marshmallow recipe too! We used a kitchen torch and tested it! Works great!! Stay tuned because we have toasted marshmallow chocolate cream bars coming to the blog soon too! We should have that posted next week.
One thing you need to know about this recipe is that you really want to use a stand mixer. It will do all the work for you without the hassle of a hand mixer. This recipe takes 20 minutes to mix to get extra fluffy and that’s a long time to be holding a hand mixer. It can be done but I want you to know what you’re in for.
I have a professional KitchenAid Mixer. It probably has a bigger bowl than most. I used the whisk attachment to make this keto marshmallow fluff recipe. Don’t cut this recipe in half if you are using a stand mixer. The amount of ingredients is barely enough to reach the whisk attachment so if you cut the recipe in half it won’t whisk correctly because the whisk will barely touch the ingredients. If you have a smaller stand mixer this may not be a problem at all.
This recipe yields a delightful fluffy texture that really does taste like marshmallows! It’s not too sweet either. Allulose is not nearly as sweet as real sugar. It’s only 70% as sweet as sugar. I purchased the liquid allulose for this recipe. I haven’t tried the powdered allulose yet.
3 Ingredient Keto Marshmallow Fluff Recipe Ingredients
- 1 cup liquid allulose sweetener
- 1 tsp vanilla extract
- 1/4 cup water
- 1 packet of Knox unflavored gelatin
Note: 1 Knox gelatin packet or pouch is about 2 1/2 teaspoons (7g) unflavoured gelatine

- In a small bowl, add the water.
- Sprinkle the packet of unflavored gelatin over the water and let it set for about 2 minutes. Give it a little stir to help combine all the gelatin if needed.
- Using a stand mixer, add the prepared gelatin, vanilla extract, and liquid allulose to the bowl.
- Add the whisk attachment.
- Turn on the mixer to level 2 (slow) until the whisk begins to move.
- Once the mixture has begun to move, turn the mixture speed all the way up to level 10. I used the splash guard on my mixer but you may not need to if you bowl is deep enough.
- Set a time for exactly 20 minutes. You will see the liquid start to get texture at the 10 minute mark but to make it extra fluffy go the full 20 minutes.

Keto Marshmallow Recipe Notes:
- This keto marshmallow fluff will hold up at room temperature for many hours. I’ve tested 3 hours before putting it in my refrigerator. This means that it will go nicely on top of a cake if you wanted but I haven’t tested this recipe outside only at room temperature inside my house (meaning I’m not sure how it will hold up if you topped a cake with this fluff and brought it to a park for a party.)
- This fluff recipe holds up nicely for 2 days in the refrigerator!
- This fluff recipe can be torched to turn into a toasted marshmallow topping too! This is exciting!!
Liquid Allulose Sweetener Information:
Liquid Allulose sweetener does not have an aftertaste! It’s a mild sweetener that is only 70% as sweet as real sugar. It also has no glycemic impact for those of us on keto and worry about our blood sugar! I was able to find the liquid allulose at my local grocery store but you can also order it online on Amazon too if needed.
