carrot
shredded

egg

butter
melted

heavy whipping cream
3/4
cup
almond flour

walnuts
chopped

T
powdered sweetener
2
tsp
cinnamon
1
tsp
pumpkin spice
1
tsp
baking powder
Cream Cheese Frosting
4
oz
cream cheese
softened
1/4
cup
powdered sweetener
1
tsp
vanilla extract
1-2
T
heavy whipping cream
depending on the consistency you prefer
Instructions
Mix your dry ingredients - almond flour, cinnamon, pumpkin spice, baking powder, powdered sweetener, and walnut pieces.
Add the wet ingredients- grated carrot, egg, melted butter, heavy cream.
Add 3 T batter to preheated mini waffle maker. Cook 2 1/2 - 3 minutes.
Mix frosting ingredients together with a hand mixer with whisk attachment until well combined.
Stack waffles and add frosting between each layer!
Notes
(Servings) 2.4 net carbs without icing. 3.7 net carbs with icing. 1/4 of cake is 5.5 net carbs!
