Chop chicken into tiny pieces. Set it aside. Then slice green onion, mince garlic and chop parsley. Combine them all in a large bowl.
Add parmesan cheese, salt, and pepper and combine.
Beat the eggs and add them to the bowl. Stir to combine.
Next, add almond flour and mix.
Heat a large skillet or wok over the stove and add olive oil. Then, use your hands to shape the patties; they should be about 2’’ wide. Cook them in the skillet on both sides until golden brown. Make sure they’re cooked through.
Serve warm with your favorite sauce and salad on the side.

Tips This is a great recipe for meal prepping for the whole week. These fritters are also freezer-friendly. First, freeze them raw, using patty dividers to have them separated. Then, when ready to use, there’s no need to thaw them, just fry them over low heat for an evenly cooking. They last up to three months in the freezer.
