- 1 c. Blanched Almond Flour by Nature's Eats
- 1/4 c. Organic Coconut Flour
- 1/2 c. Pyure Stevia Blend
- 1 tbs Baking Powder
- 1 tsp Homemade Pumpkin Spice Blend
- 1/4 tsp Pink salt
- 6 Large Eggs beaten
- 6 tbs Butter Unsalted
- 1 tbs Organic Coconut Oil
- 1/4 c. 100% Pumpkin canned
- 1 tsp Pure Vanilla Extract
Preheat oven to 350 degrees.
In a medium mixing bowl- Whisk together all dry ingredients.
In a large mixing bowl- add butter, coconut oil. Warm for 30 seconds in microwave.
Add canned pumpkin, vanilla and beaten eggs. Mix well.
Add dry ingredients into the wet and mix until well incorporated.
Spread batter evenly into 4 mini bread loaf pan or foils.
Bake on middle rack for 25-30 minutes.
Let cool in pan for a few minutes before popping out.
