Ingredients

  • 1 c. Blanched Almond Flour by Nature's Eats
  • 1/4 c. Organic Coconut Flour
  • 1/2 c. Pyure Stevia Blend
  • 1 tbs Baking Powder
  • 1 tsp Homemade Pumpkin Spice Blend
  • 1/4 tsp Pink salt
  • 6 Large Eggs beaten
  • 6 tbs Butter Unsalted
  • 1 tbs Organic Coconut Oil
  • 1/4 c. 100% Pumpkin canned
  • 1 tsp Pure Vanilla Extract

Instructions

  • Preheat oven to 350 degrees.
  • In a medium mixing bowl- Whisk together all dry ingredients.
  • In a large mixing bowl- add butter, coconut oil. Warm for 30 seconds in microwave.
  • Add canned pumpkin, vanilla and beaten eggs. Mix well.
  • Add dry ingredients into the wet and mix until well incorporated.
  • Spread batter evenly into 4 mini bread loaf pan or foils.
  • Bake on middle rack for 25-30 minutes.
  • Let cool in pan for a few minutes before popping out.
