Cut apple, jicama or other root vegetable into a 1 inch slice and place it onto a small saucer plate to use as a base for the tree.
Next, trim the top and bottom of the carrot.
Place a toothpick in the bottom (wider end) of the carrot and stick it into the center of the apple, jicama or other root vegetable to form the look of a tree.
Now, stick toothpicks in an upward design around and into the carrot. This is where you will be placing the fruits.
Set broccoli florets around the base.
Next, add strawberries onto the toothpicks on the carrot. Don't add them to every toothpick.
Add cherry tomatoes around the base in the broccoli to fill spaces and stick a few on the toothpicks. Do the same with raspberries and blueberries.
Add brocolli florets between the toothpicks going up the carrot to create the look of Christmas tree limbs.
Add more blueberries and fresh mint to fill the spaces.
Next, place thin lemon slices into the tree to fill it even more.
Lastly, place a star cut out piece of lemon rind onto a toothpick and stick it on the top of the tree.
Sprinkle with monkfruit confectioners sweetener to give the look of snow dusting the christmas fruit tree.
