Chimichurri sauce:

Instructions
Preheat your Blackstone griddle to medium-high heat.
Brush both sides of the cauliflower steaks with olive oil and season with salt and pepper.
Grill the cauliflower steaks for about 5-6 minutes per side, or until golden brown and tender.
In a small bowl, mix together the chopped parsley, minced garlic, red wine vinegar, olive oil, salt, and pepper to make the chimichurri sauce.
Serve the grilled cauliflower steaks topped with chimichurri sauce.
