Low Carb Jerk Chicken Recipe

  • 2 tbsp olive oil
  • 1 1/2 pound of drumsticks and thighs
  • 3 cloves of garlic minced
  • 1/2 tsp of ginger minced
  • 1 1/2 tbsp of sugar free jerk seasoning
  • 1/2 cup of coconut aminos
  • 1/2 cup of water
  • 1 lime juiced
  • green onions for garnish


  • In a large bowl add in chicken, seasonings, garlic, and ginger, mix well.
  • Press saute mode for 10 minutes on more on the Instant Pot, add in oil. Once oil is warm, add in chicken and brown both sides.
  • Once chicken has been browned, add in the remaining ingredients (except for the green onions).
  • Cover with the lid, set to sealing. Cook on high pressure for 16 minutes. Allow for a natural release.
