In a small bowl, combine the flour, cocoa powder, sweetener, instant coffee powder and salt. Mix until fully combined
Add the butter and vanilla extract.
Mix the batter until it's soft and spreadable.
If the butter is melted it may seem watery. If the butter is hard it will come out dry. The butter needs to be at room temperature for it to mix together and make the perfect batter consistency. If it's too watery, you can put it in the refrigerator to harden back up.
Place the batter in the refrigerator for a minimum of 15 minutes or until the dough reaches a stiff consistency.
Use a small cookie scoop to scoop out each brownie bite.
Use your hands to roll the ball.
Store these brownie bites in a ziplock bag or airtight container in the refrigerator for up to 1 week.
Makes 8 to 10 small brownie bites!

Note: The instant coffee powder in this recipe is totally optional. Don't add water and make the coffee. Only use the instant powder. Don't use regular coffee grinds either. It won't work. The instant coffee dissolves nicely in this recipe.The reason you would want to use instant coffee in this recipe is to intensify the chocolate flavoring! Anyone who has ever baked with chocolate and loves it always adds coffee powder to the chocolate. It's totally optional though. Try it if you've never tried it before. If you love a strong chocolate flavor, you will be impressed with the taste!
