Chocolate Chaffles:

unsweetened cocoa powder

erythritol sweetener blend
such as Swerve, Pyure or Lakanto

teaspoon
vanilla extract
1/4
teaspoon
instant coffee powder
Coconut Filling:
1 1/2
teaspoons
coconut oil
melted
1
tablespoon
heavy cream
1/4
cup
unsweetened finely shredded coconut
2
ounces
cream cheese
1
tablespoon
confectioner’s sweetener
such as Swerve
1/4
teaspoon
vanilla extract

whole almonds
Instructions
For the Chaffles:
Preheat mini Dash waffle iron until thoroughly hot.
In a medium bowl, whisk all chaffle ingredients together until well combined.
Pour half of the batter into waffle iron.
Close and cook 3-5 minutes, until done. Remove to a wire rack.
Repeat for the second chaffle.
For the Filling:
Soften cream to room temperature or warm in the microwave for 10 seconds.
Add all ingredients to a bowl and mix until smooth and well-combined.
Assembly:
Spread half the filling on one chaffle and place 7 almonds evenly on top of the filling.
Repeat with the second chaffle and stack together.
