Keto Gingerbread House Recipe

(Makes 8 waffles)

  • 8 tablespoons butter melted
  • 1 teaspoon Mapleine extract
  • 6 tsp ginger
  • 2 tsp nutmeg
  • 1/2 cup Lakanto Monkfruit
  • 4 tsp vanilla
  • 1 tsp cloves
  • 1 tsp cinnamon
  • 1/2 cup almond flour
  • 4 tsp xanthan gum
  • 4 eggs


  • Preheat the large waffle iron.
  • Melt 8 tablespoons of butter in a microwave-safe dish for about 30 seconds to a minute or until it's fully melted.
  • Add the remaining ingredients together and mix it up until it's fully combined.
  • Allow the batter to sit for about two minutes.  This will allow the xanthan gum to thicken up a bit.
  • Divide the mixture into two equal parts if you are using a large 4 count waffle maker.
  • Bake the waffles for between 4 and 6 minutes.  They should be slightly crispy on the outside and fully done in the middle
  • Remove them from the waffle maker and allow them to cool on a wire rack.


Once the waffles have completely cooled, you will use 7 of the waffles to assemble to this gingerbread house.
