Chayote Apple Pie Filling

cooked, peeled and sliced

melted

cream of tartar

eggs
room temperature

mozzarella
shredded

Ceylon cinnamon

Swerve Confectioners

coconut flour

tsp
baking powder

tsp
vanilla extract
Instructions
How to make Apple Pie Taco Filling
Boil the whole chayote for 25 minutes. Let it cool. Peel and slice into 1/4 inch slices.
Mix all ingredients together and stir in chayote to coat well.
Place in a small baking dish and cover with foil. Bake for 20 minutes.
Place 1/4 of the mixture in a food processor or small blender and process until it reaches applesauce consistency.
Add to chayote slices and stir.
Apple Pie Churro Chaffle Taco Instructions
Whip eggs.
Add sweetener, cinnamon, and vanilla.
Mix well.
Add remaining ingredients and stir.
Put 3 T batter in preheated Dash Mini Griddle.
Cook for 5 minutes.
Sprinkle hot chaffle with cinnamon and granular sweetener mixture.
To Assemble
Place chaffles in taco holders or fold gently to shape.
Add 1/4 of Apple filling to each taco chaffle.
Top with whipped cream or vanilla bean ice cream.
