Jamaican Jerk Chicken Filling

  • 1 pound organic ground chicken browned or roasted leftover chicken finely chopped
  • 2 tablespoons Kerrygold butter
  • 1/2 medium onion chopped
  • 1 teaspoon granulated garlic
  • 1 teaspoon dried thyme
  • 1/8 teaspoon black pepper
  • 2 teaspoon dried parsley
  • 1 teaspoon salt
  • 2 teaspoon Walker’s Wood Jerk Seasoning Hot and Spicy jar type paste
  • 1/2 cup chicken broth

Chaffle Ingredients

  • 1/2 cup mozzarella cheese
  • 1 tablespoon butter melted
  • 1 egg well beaten
  • 2 tablespoon almond flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon turmeric
  • A pinch of xanthan gum
  • A pinch of salt
  • A pinch of garlic powder
  • A pinch of onion powder


  • In a medium saucepan, cook onion in the butter.
  • Add all spices and herbs. Saute until fragrant.
  • Add chicken.
  • Stir in chicken broth.
  • Cook on low for 10 minutes.
  • Raise temperature to medium-high and reduce liquid until none is left in the bottom of the pan.
