Keto Vanilla Twinkie Copycat Chaffle Recipe

  • 2 tablespoons butter melted (cooled)
  • 2 ounces cream cheese softened
  • 2 large eggs room temp
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon Vanilla Cupcake Extract optional
  • 1/4 cup Lakanto Confectioners
  • Pinch of pink salt
  • 1/4 cup almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder


  • Preheat the Corndog Maker.
  • Melt the butter and let it cool a minute.
  • Whisk the eggs into the butter until creamy.
  • Add vanilla, extract, sweetener, salt and then blend well.
  • Add Almond flour, coconut flour, and baking powder.
  • Blend until well incorporated.
  • Add ~2 tbs batter to each well and spread across evenly.
  • Close lid, lock and let cook 4 minutes.
  • Remove and cool on a rack.
