In a cast iron skillet, place olive oil in bottom of skillet to coat the pan.
Add in chicken breasts.
Sprinkle chicken with salt, pepper, Italian seasoning, onion powder and stir to combine.
Once the chicken has cooked through (can be slightly under cooked as it will finish in the ovestir in red pepper flakes and marinara sauce. Ensuring the marinara is evenly distributed.
Top the chicken with pork rinds, Parmesan, mozzarella and dried basil.
Pop in the oven for 15 minutes to melt the cheese.
Broil for 5 minutes to get the cheese a nice golden brown color.

NOTE: If you don't have a cast iron pan, make the chicken in a regular skillet. However, you'll want to place the chicken mixture into a 8x8 casserole dish after you've coated with the marinara and the seasonings. Top with the pork rinds, Parmesan, mozzarella cheese and basil. Bake for about 20 minutes for cheese to melt and broil for 3-5 minutes until you get a golden color on top of the cheese!
