The BEST Keto Pesto Chicken Casserole Recipe I've ever tried! It's the perfect Keto Casserole for large families too! It's an easy keto dinner or low carb dinner idea!
In a medium size bowl, mix the cream cheese, basil pesto, sour cream, parmesan cheese, and Frank’s Red hot sauce until it’s fully combined.
In a 9 x 13 casserole dish, add a layer of raw baby spinach first.
Then place the raw chicken breasts on top of the spinach.
Then spread the cream cheese mixture on top of the chicken breasts until each one is fully coated.
Sprinkle the Mazzarella cheese on top.
Bake it at 350 degrees uncovered for 40 to 45 minutes or until the center of the chicken is done.
Serve warm and enjoy!

Let me also mention that even though we used chicken breasts in this recipe, you can use any part of the chicken you want. It will still taste amazing. I've been known to buy the skinless, boneless chicken thighs and use these too. I love dark meat. Oh, and the chicken breasts will never be dry when you make it in a casserole like this too. It really is super simple.
