of olive oil

onion chopped
1/2
pint
of grape tomatoes
sliced

cup
of sliced mushrooms

cloves
of garlic minced
salt and pepper to taste

pound
of large cooked shrimp
tails on and deveined (fresh or frozen)
1
lemon
sliced Parmesan cheese shavings, to garnish
Instructions
In a large pan over medium high heat, add in olive oil and warm.
Next, add in onions and cook two minutes, or until softened.
Add in tomatoes, mushrooms, garlic, and salt and pepper.
Mix together 2 minutes, then add in shrimp and lemon slices. Stir often until shrimp has heated through.
Toss in zucchini, fold into veggie mixture and warm through before serving.
Notes
After vegetables and shrimp have warmed through, if there is excess liquid from shrimp, feel free to drain some before adding in the zucchini.
