Ingredients

cherry tomatoes
1
garlic clove
1
small green bell pepper

ounces
feta cheese
1
cucumber
1/2
red onion
1/3
cup
kalamata olives
A handful of mint leaves
2
tablespoons
fresh parsley
Dressing
2
tablespoons
olive oil
2
tablespoons
red wine vinegar
1
tablespoon
dijon mustard
Salt and ground pepper to taste
Instructions
Remove the tips of the cucumber, scoop out the center and chop it into 1/2 inches slices that will create half-moons.
Chop cherry tomatoes into halves and onion into thin slices.
Chop the green bell pepper into bite-size pieces and mince garlic.
Chop feta cheese into cubes or crumbled.
Layer all the ingredients of the salad in a big bowl.
Whisk all the ingredients of the dressing and toss the salad with it.
Serve the salad in individual bowls and enjoy it immediately.
Notes
This salad is best while fresh, anyways, leftovers last in the fridge for up to 3 days.
If you want a full meal, add some chicken!
