In a medium bowl, add 2 eggs and a tablespoon of water. Use a fork and whip the eggs and water until fluffy.
In a separate medium bowl, add the parmesan cheese and Italian seasoning. Mix until fully combined.
Lay out a sheet of parchment paper onto your large baking sheet.
Sprinkle salt and pepper on each pork chop before dipping it in the egg wash.
Dip the seasoned pork chops into the egg wash and then immediately into the parmesan cheese mixture.
If you want extra crust, you will want to double dip the pork chop. This means you will dip the coated pork chop back in the egg mixture and then back in the parmesan cheese mixture again to add an extra coating.
Place the pork chops on the baking sheet and sprinkle a small amount of mozzarella cheese on top of each pork chop.
Bake at 350 degrees for about 20 minutes or until the internal temp reaches 145 degrees. This may take longer than 20 minutes if your pork chops are thick.
Serve warm with a side of vegetables or a side salad with ranch dressing or bleu cheese dressing.
