Mix the ingredients with a hand mixer until they are fully combined.
Add the almond flour, baking powder, and erythritol.
Line a bread loaf pan with parchment paper and pour the ingredients in the pan. Or use 3 mini loaf pans or a bundt pan. Just be sure to spray the bundt pan with non stick cooking spray first if you are not using parchment paper.
Bake the melted ice cream cake.
3 mini loaf pans = 35 minutes bake time
1 bundt pan = 45 minutes bake time
1 bread loaf pan = 45 minutes bake time
Bake the Melted Ice Cream Cake sweet bread for the time suggested. Do a toothpick test to make sure it's done. Poke a toothpick in the center of the cake, if it comes out clean, it's done. If not, continue baking it at 5 minutes at a time until it's done.
While the cake is baking, add the glaze ingredients to a bowl and mix it with a hand mixer on high until it's fully combined.
